How To make Elizebeth's Cheese Biscuits
2 c Unbleached all-purpose flour
1/3 c Nonfat dry milk powder
3 tb Grated white cheddar cheese
-(preferably raw milk) 2 1/2 tb Wheat germ
2 tb Grated mozzarella cheese
2 tb Grated Emmenthal cheese
1 tb Baking powder
1 ts Salt
1/2 c (1 cup) well-chilled butter,
-cut into 8 pieces 1 c Cold water
Makes about 20 Preheat oven to 350 F. Lightly butter 2 baking sheets. Combine all ingredients except butter and water in large bowl of heavy-duty electric mixer. Using paddle attachment, cut in butter until mixture resembles coarse meal. Slowly pour in water, beating until dough just comes together. Turn out onto lightly floured surface and pat to 3/4-inch thickness. Cut into 2 1/2 inch squares using floured knife. Arrange on prepared sheets, spacing 1 inch apart. Bake until light brown, about 15 minutes. Serve immediately. (Dough can also be made by hand.) Bon Appetit

making oat milk biscuits
early in quarantine i learnt how to make biscuits from emily trotochaud's bake alongs. she always entices me with her delectable cooking and being at home all the time i needed to learn how to make a few comforting staples. i made a few tweaks to the recipe for my own taste buds and I've been making these biscuits at least once a week since. whether i'm pawning them off on friends or enjoying with a glass of tart cherry juice, the act of making them has been therapeutic. join me as i bake oat milk biscuits and spend the afternoon enjoying them topped with cheese and avocado. (another favorite topping of mine is butter and honey, makes them taste like pancakes)
below is the recipe I've been using- please let me know if you bake-a-long with me!
oat milk biscuits:
2 cups of all purpose flour
1 TBS baking powder
1 TBS sugar (more if you want sweet biscuits!)
1 stick of salted butter
3/4 cup oat milk
pinch of coarse salt
preheat your oven to 425 and set a little pat of butter on the stove to melt while you work (to coat the tops of the biscuits before they go into the oven). mix the dry ingredients first, then toss in your cut butter and coat with the dry mix before crushing the pieces between your fingers. next create a well in the center of your bowl and add the oat milk. using a butterknife i don't necessarily mix, but instead pull the knife through the dough to combine ingredients while discouraging gluten activation as much as possible. dumping the mix onto the table i gently fold it several times to create the layers of my biscuits. after shaping your dough, cutting and buttering the top, i use a pinch of salt and put the pan of biscuits in the fridge for about 10 minutes to firm up the butter before going in the oven (cold butter = steam and rise to your dough). i cook them for about 17 minutes, much depends on your oven but you'll know they are finished when the tops are golden.
