3 lb Elderberries
3 lb Half-ripe grapes
Sugar Wash elderberries. Remove stems. Cover with water. Cook until soft. Drain through jelly bag. Wash grapes. Remove stems. Cover with water, cook until soft. Drain through jelly bag. MAKING ELDERBERRY JELLY FROM CONCENTRATE
Today I used my elderberry concentrate to make some jelly. The 12.5 bottle gave me a little under 2 cups. I added 2 cups of water with my elderberry liquid. I used 5 1/2 cups sugar. I also tryed the butter in the mix to cut down on foam. I do think that worked a little, dont think I had as much foam. After the long waiting and boiling, my jelly.. well turned out great. All the jars sealed.
I used ball and some empire lids I got on sale. Was very happy with the outcome. Thanks for watching.

**The native North American elderberry is Sambucus canadensis NOT Sambucus nigra.
***The best time to harvest elderberry cuttings is actually in deep winter, January or February. This will preserve the life of your plant. Roots will emerge when cuttings are held at a warm temperature 50-70 degrees Fahrenheit.

Purple combo: Eldergrape!
I've made plain elderberry jelly and plain grape jelly. I thought to myself, they are both purple--why not combine them into Eldergrape Jelly? I had some frozen Concord grapes, some still-fresh-after-two-months-in-the-fridge grapes and a pint of frozen extra grape juice. And gallons of frozen elderberries! The combo turned out delicious! Good thing, because now I have 15 pints of that combo jelly! Any friends and neighbors want to try it? Just let me know. :)
