How To make Elaine's Dolmas
48 Grape leaves (about 1 jar)
1/2 c Long grain brown rice;cooked
2 c Onion; finely chopped
2 tb Parsley; finely chopped
2 tb Mint leaves; finely chopped
2 ts Dill weed
1/4 c Pine nuts
1/4 c Currants
1/4 ts Black pepper
1 c Tofu TVP (optional)
Place grape leves briefly in a pan of warm water to separate them, then drain on paper towels. Combine all other ingredients. Place grape leaf vein side up, with the stem toward you. Put a mound of rice mixture in the middle of the leaf (about 1 rounded tsp to 1 rounded tbsp, depending on the size of the leaf). Fold over sides and roll up leaf. Layer the rolled leaves in a large saucepan (3 quart) placing them side by side and close together. Press with a heavy heat proof plate that fits inside the pan. Add enough boiling water to cover leaves. Cover and simmer for 1 1/2 hours. Hints: Dolmas may be served warm or chilled. If warm, try serving them with lemon sauce. If cold, serve them with garbanzo puree or eggplant. Tabouli is also a good dish to serve at the same meal. Dolmas are easy to take to a potluck dinner and they also make a very special "company meal." Recipe for making tofu TVP follows. Using a Dolmades Machine - How to make Greek Dolmades or Dolmas
This is a quick and basic instructional video on how to use this cool Dolmer dolmades (sarma) maker. Some find it easier to roll these by hand but others of us need a bit of assistance. Hope it helps! The recipe I'm using for this one is Greek and has no meat but sure is yummy!! I'll list it below for you :)
Dolmades (Dolmas, Sarma etc.) are known and made in many countries including Turkey, Armenia, Greece, Lebanon and many others. Don't fight about it, just enjoy them!!!

Recipe for vegetarian dolmades:
2 cups Pearl or Arborio rice
3 lg Onions
1 1/2 cups Olive Oil
Juice of 2 lemons
3 cups chicken broth
1 tbsp. each of Dill, Mint, and Parsley
50 Grape leaves (can be purchased in a jar or use fresh tender leaves)
1 tsp. Salt
1/4 - 1/2 tsp. Pepper (to your taste)
Rinse and drain rice.
In a large bowl add rice, onion, oil, lemon juice, mint, parsley, dill, salt and pepper.
Fresh grape leaves should be dipped in hot water for about 5 minutes to make them more flexible.
Jar or canned grape leaves should be rinsed thoroughly in cold water first, then hot.
Place a few of the more coarse leaves open on the bottom of the pan as a base and then arrange dolmades side by side and then create another layer on top until all of them are used. If you have extra leaves or torn leaves, place them on top as a final layer.
Add chicken broth.
Cover with a heavy plate to keep them from floating up while cooking.
Bake at 425 degrees for 45 minutes. Shut off oven and let them sit in the oven until the broth absorbs.
Squeeze lemon on them and enjoy the yumminess!!

What I do on the side.....Greek festivals!
Every year from May to October I set up my booth at various Greek festivals all over the country and sell my goodies (jewelry, gifts, souvenirs etc.). The Greek churches transform their grounds so you feel as if you're in the Plaka in Athens, Greece. It's lots of fun selling and meeting people who come from all over to be Greek for a day (or weekend)! I love meeting new people and have a great time doing this though it's a TON of work!!! Anyway, here's a glimps of what I do!
