Alright, raise your hand if you’ve ever heard of a runza sandwich! If you are from one of four lucky Midwestern states, namely Nebraska, Kansas, Colorado, or Iowa, you’re probably waving both hands in the air right now! That’s right, we see you! And if you aren’t, you’re probably staring blankly at the screen. But don’t worry, your life is about to change. And by the end of this video, you’ll be raring to go on a “runza run”. So, what the heck is a runza???
In today’s video, we will dive deep into this classic Midwestern sandwich, which originates back to 1700s Russia. Long story short, a bunch of Germans moved to the middle of nowhere Russia, invented the runza, then moved to Nebraska and brought their delicious creation with them! Yes, there are quite a few more parts to that story, but in the end, we can thank Russia and Europe for these delectable, cabbage-filled sandwiches! Oh, and we also need to thank a woman named Sally Everett, who brought runzas to the masses when she opened the first Runza restaurant in Lincoln, Nebraska in 1949.
We’ll begin by discussing the origin of the runza, then explore how it became a Midwestern franchise sensation with over 80 restaurants currently open, and still expanding! We’ll dive into a controversy regarding a Runza franchise at the University of Nebraska Lincoln, and sneak peek, it doesn’t have a happy ending. Next, you’ll see which celebrity chef visited a Runza and LOVED IT!!! Finally, we’ll show you how to make your own runza at home. You’d better go stock up on meat and cabbage!

I prepare a recipe sent to me by a subscriber, abbyloowho, to give a try. You must like cabbage to enjoy this meal. I liked it, mom wasn't too sure she liked it. Give it a try!
2 pounds lean ground beef
2 bags of coleslaw mix (cabbage mix)
2 cans of crescent roll dough (preferably the one that is not already cut but if you can't find that its okay just seal up the seams)
Salt and Lots of Pepper
Preheat the oven to 350 and lightly grease a 9 by 13 pan.
In a large pot place the coleslaw mix in with salt and pepper and cook down for about 20 minutes or until you like how soft it is
Brown the ground beef with salt and pepper
Mix the ground beef and slaw mixture together
Place one can of crescent roll dough into the bottom of the pan
Place in the slaw mixture
Place the second can of crescent roll dough on top and cover with aluminum foil.
Bake for about 30 minutes and the last five remove the foil to allow the top to brown.
Serve nice and hot! You can either use a spoon or cut it and use a spatula.
Abbyloowho's notes:
My family loves using the slaw mix because it has two kinds of cabbage and a little carrot in it(add extra flavor which would be good since you have issues with salt) but if you cant find it no worries just use about 4 cups of shredded cabbage of your choosing!
I am sure you can easily cut this recipe in half and use an 8 by 8 inch pan and reduce the cooking time just a bit!
You can also add cheese if you wish, any kind, about 2 cups worth for a whole recipe!

I saw this recipe in an old cookbook and I found it online as well. I just had to try it. And it did not disappoint.
It was easy to make and absolutely scrumptious. I made mashed potatoes on the side, which complimented this dish perfectly.
We love cabbage, and any recipe with cabbage always catches my eye.
I was curious about the name, so here is a little history for you.
Runza is a a yeast dough bread that is pocket filled with beef, sauerkraut, onions and seasonings. It is a regional dish of Nebraska, although it first originated in Eastern Europe. It made its way to America by German immigrants who settled in Sutton Nebraska.
So interesting! But on another note I fixed my iPhone. Somehow one if my settings was changed, perhaps due to an update. Therefore I have lots to catch up on. No time like the present. ????. Y'all have a great afternoon and go make you some Runza Casserole! ❤️Deb
Ingredients from original recipe:
2 lbs beef
2 tubes of crescent rolls
2 onions diced
4 C cabbage cubed
2 C mozzarella cheese
salt and pepper to taste
Ingredients I used:
1 lb turkey burger
1 tube of crescent rolls
1/4 yellow onion diced
2 1/2 C cabbage cubed
8 slices Swiss cheese
1/2 tsp garlic powder
salt and pepper to taste
1 Tbs olive oil
1/4 very large yellow onion
