Hey friends! Today I am in the kitchen with a super easy recipe that will make you feel all warm and cozy. This lentil chili is healthy, hardy, and quarantine approved!
Ingredients:
7 cups broth
1 chopped onion
1 TBS chopped garlic
1 TBS oil
2 TBS tomato paste
1 28oz can crushed tomatoes
3 carrots, chopped
1 cup lentils (rinsed)
1/2 TBS chili powder
salt & pepper to taste
2 TBS Worcestershire sauce

1 tablespoon vegetable oil
1 onion, diced
1 bell pepper, diced
1 jalapeno, diced or minced
1 teaspoon kosher salt
¼ teaspoon black pepper
3 cloves garlic, minced
2 tablespoons chili powder
1 tablespoon cumin
1 teaspoon cinnamon
2 tablespoons tomato paste
1 can (15-ounce) crushed tomatoes
3 cups low sodium vegetable stock
¾ cup dry red lentils
1 can (15-ounce) low sodium black beans, drained and rinsed
1 tablespoon honey
Optional: 2 cups frozen corn
¼ cup chopped cilantro
Optional: diced avocado, shredded cheese, sour cream

This lean chili is the best! It’s made with ground turkey, lentils, and butternut squash. I like to make this at the beginning of the week to have on hand for a healthy lunch or dinner option, especially in this cozy fall weather! And it’s super easy to prep. In the Tone It Up Nutrition Plan, this recipe is made with a slow cooker. If you’re like me and don’t have a slow cooker, I’m showing you how to make it on the stovetop. It’s great to whip up on a Sunday when you’re home doing your meal prep ~ just make sure you keep an eye on it.
Your house will smell amazing too! The best thing about this chili is you can customize it to your liking ~ add a little more spice if you like things spicy ???? or add more cinnamon for a sweeter kick! You can also make it vegetarian by swapping in tofu or just keeping it totally veggie.

How to Make Lentil Chili | Plant Recipes
Easy and budget friendly crockpot lentil chili recipe. This is one of Emma Ryan's favorite recipes that is perfect to make for yourself, your family, or a crowd.
What you will need for this recipe:
1 crockpot, instant pot, slow cooker, etc
1/2 of a yellow onion
1 garlic clove
1 red bell pepper (could be green, yellow, orange, whatever color you want)
1 can of black beans (any bean will work)
1 can of diced tomatoes
1 can of refried black beans
32 ounces of vegetable broth
2 teaspoons of Himalayan salt
1/2 pound of green lentils (could be black or red lentils)
2 tablespoons of chili powder
Optional: green onions, cilantro, avocado (toppings)
Cooking instructions:
Set crockpot on medium heat for 6 hours
End result:
Delicious lentil chili that serves about 6 people. Enjoy!

This is perfect for meal prepping and batch cooking since it's so easy to scale the recipe up.

Ingredients:
1 large onion, chopped
3 cloves of garlic, chopped
3 carrots, chopped
3 stalks of celery, chopped
1/2 package of firm tofu, crumbled
2 tsp cumin
2 tsp smoked paprika
1/2 tsp black pepper
2 tsp liquid smoke
1 large Can of fire roasted tomatoes (28 oz) *regular canned tomatoes will work.
2 cups of water
1 can of kidney beans, drained and rinsed
1 can of chickpeas, drained and rinsed
1 can of black beans, drained and rinsed
2 tsp braggs liquid aminos (or sub soy sauce or tamari)
1 tsp of vegan worcestershire sauce
Directions:
1. Add chopped onion, garlic, carrots celery into a large saucepan.
2. Sauté until veggies start to get soft, then add the crumbled tofu.
3. Add the spices and fire roasted tomatoes, stir well and sauté together for a few minutes.
4.Add the water and beans and mix in the braggs and worcestershire sauce.
5. Simmer for at least 20-30 minutes.
Serve and enjoy!
