How To make Easter Kulick with Paska
brEAD:
2 pk Active Dry Yeast
1/2 c Warm Water
1/2 c Warm Milk
1/2 c Sugar
1 ts Salt (opt)
2 Eggs
1/2 c Shortening
6 Flour
1/2 c Raisins
1/4 c Blanched Almonds, chopped
1/2 ts Vanilla
FROSTING:
1/2 c Powdered Sugar
1 1/2 ts Warm Water
1/2 ts Grated Lemon Peel
1/2 ts Lemon Juice
PASKA:
1/4 lb Sweet Butter, unsalted
1/2 lb Powdered Sugar
4 Egg Yolks
3 lb Farmer Cheese
1/4 lb Raisins
1/2 lb Nuts, chopped
1 ts Vanilla
1/2 pt Cream
2 c Cherries, chopped
*** Bread *** Dissolve yeast in warm water. Stir in milk, sugar, eggs, shortening, 2/ cups flour, raisins, almonds and vanilla. Beat until smooth with electric mixer. Mix in enough flour remaining flour to make dough easy to handle. Turn out on a lightly floured board and knead adding remaining flour until smooth and elestic, about 5 minutes. Cover with saran wrap and let rest 20 minutes. Divide in half and let rise about 1/ hours until double. Place each half in a well greased 1-lb coffee can. Let rise to top of cans (about 40 minutes). Preheat oven to 375oF. Bake 40-45 minutes or until brown.
Remove and drizzle with frosting mixture while still warm and serve with Paska. *** Frosting *** Mix all ingredients together. *** Paska *** Mix the butter and sugar together until smooth. Add remaining ingredients, mixing well. Put in a cheese cloth to drain out liquid (about 3 hours), using a weight. Remove from cloth and refrigerate. A Slovakian family tradition. Made only for Easter.
Neapolitan Cheese Paskha for Russian Orthodox Easter!
Cheese Paskha tradionaly made for Russian Orthodox Easter and is a Center piece at Easter table.
I have a traditional recipe on my channel and you can watch it here:
Today I want to share another variation of Cheese Paskha that will have 3 different layers: Vanilla, Cherry and Chocolate!
And I call it Neapolitan Paskha.
Here are the ingredients:
500g tvorog(farmer's cheese)
3 egg yolks
100g(½ cup) sugar
120g(½ cup) heavy whipping cream
50g soften butter
For Vanilla layer: ¼ tsp vanilla powder.
For Cherry layer: 100g (1 cup) frozen cherry( thawed out and drained) and some dried cherries.
For Chocolate layer: 70g dark chocolate(melted) and some chopped.
It is a 2 day process.
First day:
In a sauce pan add farmer's cheese, sugar, egg yolks and butter.
Mix to combine.
Put on the stove to heat up and turn off when see first bubbles.
Using hand mixer smooth out cheese mixture.
Transfer into a bowl and chill for 30 minutes.
In another small mixing bowl whip up heavy cream to stiff peaks.
Remove cheese mixture from the fridge and fold in whipped cream.
Separate mixture into 3 bowls . Keep in mind that Paskha mold is cone shaped and in order for layers to look equal you need to have smallest amount for the white layer, medium amount for cherry layer and largest amount for chocolate layer.
To white layer add vanilla powder.
To Cherry layer add cherry preserve(see video) and chopped dried cherries.
To chocolate layer add melted chocolate and chopped chocolate pieces(see video)
Line your Paskha mold with double layer of cheese cloth, previously soaked in boiling water and place up side down on a plate or shallow bowl.
Start filling it up.
White,then Cherry layer, then Chocolate.
Make sure your mixture goes all the way to the top.
Fold cheese cloth.
Place plate on top and some kind of weight(i used rock)
Place in the fridge and refrigerate overnight.
Next day:
Remove mold.
Carefully peel off cheese cloth.
Put on the plate and decorate the way you want it!
