Mutton Chops Recipe
Ingredients:
Mutton Chops 1KG
Salt ½ TSP
Turmeric powder ½ TSP
Ginger+garlic powder 2 TBSP
Water 300ML
For Marination
Dahi ½ Cup
Salt ½ TSP
Red Chilli powder 1 TSP
Crushed Coriander 1 TSP
Cumin Seeds 1 TSP
Garam Masala 1 TSP
Yellow Food Color ¼ TSP
Lemon Juice 1 TBSP
Green chilli chopped 2
Direction:
In a pressure cooker, add Mutton chops, Ginger+garlic paste, Salt, Turmeric powder, water, mix it well and bring it to boil.
Now cover and steam cook for 10 minutes.
After 10 minutes open the cooker and cook until water dries.
In a bowl, add yogurt, salt, red chilli powder, garam masala, crushed coriander, cumin seeds, lemon juice, yellow food color, Green chilli chopped and mix it well.
Add Boiled mutton chops and apply the mixture.
Now rest it for 30 minutes.
In a pan, add cooking oil and heat it.
Add Marinated mutton chops, cover and cook each side for 3 minutes on low flame.
Mutton chops is ready to serve.

Goat/Mutton Liver - 250 grams (you could skip if you don't like liver)
Ginger - 3-inch piece (juliennes)
Garlic - 2 whole pods (juliennes)
Green Chillies - 5 to 6 (juliennes)
Bottle Masala - 3 - 4 tbsp
Vinegar - 1/2 cup (use palm/toddy vinegar or just white vinegar)
Garam Masala powder - 1 tsp (optional)
Oil for cooking
Salt to taste

Sorpotel tastes best on the next day. Moreover, the sorpotel dries up and the gravy thickens the next day. Add stock from the boiled meat and liver to make gravy

Recipe for Indian Pork Chops
Ingredients:
Pork Chops - 2
Sliced Onions - 1/2
Chopped Curry Leaves - 4 to 5
Salt
Crushed Black Pepper
Indian Style Pork Chop Marinade:
Chopped Ginger - 1 Tbsp
Chopped Garlic - 1 Tbsp
Chopped Cilantro - 4 Tbsp
Chopped Onion - 5 Tbsp
Chopped Chillies - 2
Coriander Powder - 2 Tsp
Turmeric Powder - 1 Tsp
Salt - To taste
Crushed Black Pepper - 2 Tsp
Note: The recipe is ideal for Keto (No / Low Carb) in addition to being awesomely tasty!
Cooking Instructions:
Prep the Pork Chops - Clean and trim the excess fat around the pork chops. Do leave some fat for taste. Coat pork chops with salt and crushed black pepper. Set aside for 3 to 4 hours.
Prepare the Marinade - Crush together all the ingredients for the Indian marinade together in a grinder or mortar and pestle.
Pork Chops Grilling - Once hot, brush the grill with oil and get it ready for cooking. Place the pork chops on the hot grill. After 5 mins, turn the pork chops 90 degrees to develop grill marks. After another 5 mins, flip the pork chops. After about 15 - 20 mins the pork chops will be ready for the next step.
Indian Style Cooking of the Pork Chops - Place a pan directly on the grill and heat some oil. Once hot add chopped curry leaves and onion and fry them until golden brown. After that add the Indian style pork chop marinade to the pan. Once the marinade is cooked, place the pork chops in the pan. Cook them until the Indian style marinade is fully cooked and starts to run crispy.
Serving - Serve the Grilled Pork Chops - Indian Style with onions and lime.

This is a super easy and lip-smacking pork recipe blanketed in a mix of basic spices. This wonderfully warming pork masala curry is as tasty as it looks and it tastes best the next day like most of the pork curry recipes.
Serve it hot as a side dish with sannas or pulao or dosas or even plain steamed rice.
NOTE :
How to know the doneness of the meat ?
Here are some visual cues that may help :
Check the color : The pork should be brown on the outside and slightly pink on the inside. As it cooks, the pink color should become lighter.
Check the texture : The pork should be firm to the touch and should not feel slimy or mushy. If it feels mushy, it may not be cooked enough.
Check the juices : When you cut into the pork, the juices should be clear and not pink. If the juices are still pink, it may not be cooked enough.
However, the most accurate way to determine if pork is 70 percent cooked is to use a meat thermometer. Insert the thermometer into the thickest part of the meat without touching bone. The internal temperature should read 145°F (63°C) for pork. Always measure the temperature at the centre of your meat, regardless of its size.
Another Method :
After 8 to 10 minutes of boiling, prick with a fork and check if it's still to be cooked from inside, then you can be your own judge for determining if it is 70% or even 80% cooked.
Ingredients :
300 gms Pork (shoulder portion with fats, cut into cubes)
Sufficient Water
1 no. Bay Leaf
1 no. Star Anise
6 to 8 flakes Garlic Cloves (sliced or crushed)
½ inch Ginger (sliced or crushed)
1 tbsp Vegetable Oil
1 large size (100 gms) Onion (sliced)
1 tbsp Ginger Garlic Paste
1 medium size (70 gms) Tomato (chopped)
½ tsp Turmeric Powder
2 tsp Red Chilli Powder
1 tsp Meat Masala Powder
1 tsp Coriander Powder
½ tsp Salt (or as per taste)
2 to 3 sprigs Coriander Leaves (chopped)
Note : tsp is teaspoon
tbsp is tablespoon

Pork Chops Ingredients:
oil
3 pork chops
a handful of coriander leaves
8-9 garlic cloves
3 red chillies
5 green chillies
2 inches of ginger
1 medium-size chopped onion
½ tsp turmeric powder
1 tsp cumin seeds
1 ½ tsp peppercorns
2 tbsp of water
2 tbsp of vinegar
salt to taste
Method:
In a pan heat some oil and place the pork chops and let it cook on low a flame.
Grind together a handful of coriander leaves, garlic pods, red chillies, green chillies, ginger, chopped onions, turmeric powder, cumin seeds, peppercorns and little water.
Once the pork is about 90% cooked on both sides remove it from the pan and keep it aside.
In the same pan add onions and let them turn golden brown in colour. To this, add the masala and cook well. Add white vinegar and the pork chops and add some salt to taste.
Roast the pork chops in the masala till they turn crispy on both sides.
Indian Style Pork chops are ready to be served!
