2/3 c Butter 1 c Sugar 1 ts Almond extract 1 Egg, beaten 1 1/2 c All purpose flour 1/2 ts Baking powder TOPPING: 1 Egg 1 tb Milk sliced almonds In bowl, cream butter and sugar. Add almond extract; blend in egg. Mix flour and baking powder; add to butter mixture. Stir dough with fork until smooth. Spread dough in greased 8 inch square cake pan. Lemon Almond Dutch Butter Cake
This is a really lovely Dutch treat. A chewy, dense cake, with a cookie texture. It is rich in butter with the great flavours of lemon and almonds. It is irresistable. I enjoyed it immensely with my afternoon cup of tea. Very easy to make and just as easy to eat.

This is a traditional recipe for BOTERKOEK (dutch butter cake). It is warm, gooey, soft and fluffy: ALL IN ONE BITE! I am so glad to be able to share this recipe with you! I am not lying when I say this is one of my favourite cake recipes! A simple vanilla cake is so YUM and this requires no baking power / soda at all. Boterkoek / Butter Cake
BOTERKOEK 1 cup butter, softened 1 cup sugar 1 tsp almond extract 1 egg (save a bit of egg to brush on top) 2 cups Mix very well together. Press into a 9 round pan. Brush egg on top. If you forget to save egg for the top, you can use a bit of milk instead.
Double recipe for two 9 round pans. (30-35 minutes) Triple recipe to fit in a 12 X 17 X 1 cookie sheet. (25 minutes) Bake at 350 degrees.
