Dutch baby — sweet and savory popover pancakes

***RECIPE***
eggs (one per person, I do 2-3 in a 10 in / 25 cm pan)
milk (1/3 cup, 80mL per egg)
flour (1/3 cup, 40g per egg, and I like to replace up to half my flour with starch)
salt (a pinch per egg)
sugar (1 teaspoon per egg, sweet or savory)
vanilla (only for sweet)
spreadable cheese, like ricotta/brie/mascarpone (OPTIONAL 1 tablespoon per egg, improves the taste but makes it not puff as much)
butter
toppings (lemon juice and powdered sugar is nice for sweet, eggs/salami/onion is nice for savory)
If possible, warm the eggs and the milk before mixing. Combine the eggs, salt, sugar and vanilla (if using) in a mixing bowl and whisk until frothy. Whisk in the flour until smooth, then whisk in the milk. Or you could just dump all of that in the blender at once. Let the batter sit for at least 20 minutes before baking.
Put your pan (nonstick or cast iron) in the oven and get the oven heating to 425ºF/220ºC. When it's all the way hot, take the pan out of the oven and melt in a thick film of butter. Pour in the batter and return the pan to the oven. Bake until puffy and golden (mine took 20 minutes).
If you want to cook some eggs on top like I do in the video, bake until almost done, pull it out, put on your eggs/seasonings/onions/salami/whatever and return to the pan for a few minutes until the yolk is as firm as you want it.
Transfer to a cooling rack and let it steam out before you eat.

Dutch babies are very popular with kids because they're very easy to make, they rise very quickly, and they form weird and funny shapes. But for a long time, like many people making dutch babies, I was doing it wrong. I found out I was overcooking my dutch baby every time. And when it's not overcooked, a dutch baby becomes something entirely different from the popular brown-crusted dish seen on Facebook. A properly cooked dutch baby is much more light and fluffy, with a more prominent egg taste. This is delicious on its own -- but this dutch baby is kicked up a notch by adding natural lemon flavor and a lemon glaze. What's more, it's actually a deutsche baby because it's a German pancake. APPLE CINNAMON DUTCH BABY PANCAKE | Easy DIY
APPLE CINNAMON DUTCH BABY PANCAKE!! So DELICIOUS!! Recipe below...
APPLE CINNAMON DUTCH BABY PANCAKE
Preheat oven to 450 degrees F.
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup fat-free or low-fat milk
2 large eggs
3 tablespoons butter, divided
1 large Honeycrisp or Gala apple, peeled, cored, and sliced
1 tablespoon sugar
1. Whisk together flour, salt, cinnamon, and nutmeg. Set aside.
2. In a medium bowl; whisk together milk and eggs. Set aside.
3. Heat a 10-inch cast-iron skillet over medium-high heat, about 5 minutes.
4. Toss apple slices and sugar in a small bowl. Melt 1 tablespoon of butter in skillet. Apple apples, sauté until tender, about 5 minutes. Remove apples to a bowl. Wipe skillet until clean.
5. Mix together flour mixture with milk mixture. Add 1 tablespoon of melted butter. Whisk until well blended.
6. Melt 1 tablespoon of butter in skillet. Add pancake batter. Arrange sauté apple evenly on top on batter.
7. Bake for 20 minutes, on the middle rack, until golden in color and puffy.
8. Transfer to serving plate. Serve with powdered sugar, syrup, whipped cream, etc., if desired.
