50g (3.5 tbsp) Butter, divided into 40g and 10g (3 tbsp & 1.5 tbsp)

???????? Dutch Baby Pancake Recipe: How To Make And Serve In 3 ways (German Pancake/Skillet pancake, ASMR)
Hi, everyone. :) Today we'll show you how to make a fluffy and delicious pancake: Dutch Baby.
Dutch baby pancake has many names, German Pancake, David Eyre Pancake, German Oven Pancake, Bismarck, Dutch Puff. According to Wiki, the idea of a Dutch baby might be derived from the German Pfannkuchen, but the current form originated in the US.
But no matter what it calls, the dutch baby is the easiest pancake breakfast or brunch you can make. Only few ingredients, one bowl, and one cast iron skillet or any oven-safe pan. It’s puff up super high in oven, because of the egg in the pancake while baking. Once out of the oven, the pancake collapses quickly, but the edges is still crispy on the outside, inside is tender like crepes.
This recipe is for a deliciouse small size dutch baby. We use 16cm cast iron skillet, but it can use any oven-safe pan or baking mold, like pie dish. You can serve it with pan or transfer to a platter. And you can enjoy it with jam, fresh fruits, lemon curd, peanut butter, maple syrup or an ice cream as you like. Hope you like this video. Dutch Baby Pancake Recipe
☞ baking mold: 16cm cast iron skillet
✎ Ingredients
large egg 1
all-purpose flour 32g
whole milk 45ml
granulated sugar 8g
ground nutmeg a pinch
unsalted butter 8g
vanilla extract 2g (optional)
lemon 1
powdered sugar for garnish
✎ Instructions
1. Place a heavy cast iron or a oven-safe pan in the oven. Preheat the oven to 210°C. Then heat uo the pan in 2 minutes.
2. Add an egg in a large bowl, beat until very frothy.
3. Sift flour and add to egg. Mix together until combine.
4. Add sugar, vanilla extract and milk. Then grate a little bit of nutmeg into the mixture and blend all ingredients until smooth.
5. Remove the cast iron from oven, be careful it's very hot. Place the butter and swirl the pan to melt the butter and coat the bottom and side of the pan.
6. Pour the batter into the pan, return pan to the oven and bake for 15~18 minutes. until the pancake is puffed and golden. Lower oven temperature to 150°C and bake 4 minutes longer.
7. Remove the dutch baby from oven, place the butter, squeeze some lemon juice, and then dust with powdered sugar. Serve immediately. You can serve from the pan or transfer to a serving dish.

Makes one 10-inch pancake (4 servings)
INGREDIENTS
Dutch Baby Batter
3 large eggs, room temperature
½ cup (120 ml) whole milk
½ cup (71 g) all-purpose flour
3 tablespoons (42 g) butter, melted
¼ teaspoon salt
Strawberry Compote
3 ½ cups (17 ½ oz/497 g) fresh strawberries, quartered
¼ c (57 g) granulated sugar
2 tablespoons water
2 teaspoons fresh lemon juice
Whipped Cream, for serving
1 ½ cups (360 ml) cold, heavy cream
INSTRUCTIONS
To make the Dutch Baby Pancake:
Preheat the oven to 425°F (220°C). Place a 10-inch cast-iron skillet on the middle rack to heat up as well.
In a large bowl, whisk together the eggs and milk until well blended. Add the flour, 2 tablespoons (28 g) of the melted butter, and the salt and whisk until smooth.
Carefully brush the bottom and sides of the hot skillet with the remaining 1 tablespoon (14 g) of melted butter, then immediately pour the batter into the skillet.
Bake, without opening the oven, for about 20 minutes, until golden brown and well risen. The Dutch baby will deflate a bit when you remove it from the oven but that is normal.
Serve immediately, with strawberry compote and whipped cream. This is best enjoyed the day it is made, but any leftovers can be stored, covered, at room temperature for up to 1 day.
To make the Strawberry Compote:
In a medium saucepan, combine the strawberries, sugar, water, and lemon juice and bring to a very gentle simmer over medium-low heat. Cook until the berries have softened and the liquid has thickened slightly, 4 to 5 minutes. Remove from the heat and let cool completely.
Once cooled, use straight away or store in an airtight container in the fridge for up to 4 days.
To make Homemade Whipped Cream
Place the cream in a medium bowl and, using a handheld mixer or whisk, whip until soft peaks form. Use immediately or cover and refrigerate until needed, up to 2 hours.

APPLE CINNAMON DUTCH BABY PANCAKE!! So DELICIOUS!! Recipe below...
APPLE CINNAMON DUTCH BABY PANCAKE
Preheat oven to 450 degrees F.
1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1/2 cup fat-free or low-fat milk
2 large eggs
3 tablespoons butter, divided
1 large Honeycrisp or Gala apple, peeled, cored, and sliced
1 tablespoon sugar
1. Whisk together flour, salt, cinnamon, and nutmeg. Set aside.
2. In a medium bowl; whisk together milk and eggs. Set aside.
3. Heat a 10-inch cast-iron skillet over medium-high heat, about 5 minutes.
4. Toss apple slices and sugar in a small bowl. Melt 1 tablespoon of butter in skillet. Apple apples, sauté until tender, about 5 minutes. Remove apples to a bowl. Wipe skillet until clean.
5. Mix together flour mixture with milk mixture. Add 1 tablespoon of melted butter. Whisk until well blended.
6. Melt 1 tablespoon of butter in skillet. Add pancake batter. Arrange sauté apple evenly on top on batter.
7. Bake for 20 minutes, on the middle rack, until golden in color and puffy.
8. Transfer to serving plate. Serve with powdered sugar, syrup, whipped cream, etc., if desired.

This delicious Apple Dutch Baby is a delicious flavor twist on the traditional dutch baby pancake. So good you might feel guilty eating them for breakfast! Also known as a German apple pancake, this is a terrific breakfast and brunch recipe. If you are strapped for time, you can start it the evening before and pretty much pop it in the oven. You can shorten the preparation time by using apple pie filling, but the crisp of new apples really takes it to the next level. Don’t let the name fool you, dutch babies contain 0% real baby but 100% deliciousness, add some apples and cinnamon and you’ve got a real treat!

Ingredients for making apple Dutch baby:
1/2 cup whole milk
2 large eggs
1/2 cup all-purpose flour
4 tbsp sugar
1 large apple, peeled, cored, and sliced thinly
1/3 cup brown sugar
1 pinch cinnamon
2 tbsp butter
powdered sugar
Instructions for making apple Dutch baby:
- The batter is super simple, just add milk, eggs, all-purpose flour, white sugar, and kosher salt to a blender and mix for a few seconds until combined
- The consistency should be quite thin like crepe batter
- Grab your favourite kind of apple and slice it very thinly
- Now add white sugar, brown sugar, and cinnamon
- Mix so the apples are fully coated in the sugar mixture
- Now heat a cast iron skillet over medium high heat and add 2 tbsp of butter
- Once the butter is melted, pour in the apples and cook until they’re soft and the sugar has caramelized
- Remove from the heat then pour the batter evenly over the apples
- Now immediately put the pan in a preheated 425 degree oven and bake for 20-30 minutes
- The batter should puff up as it cooks
- Once it’s nicely puffed and golden brown, remove from the oven and sprinkle with powdered sugar then serve warm for optimal tastiness
