Potato fondant or also known in French as Pommes De Terre Fondantes is a technique used by cutting potatoes into cylinder sahpes and browning the ends while slowly braising and roasting in stock and butter. There's probably not a better potato as they become creamy inside and buttery roasted on the top. Great served with meats or most dishes as a side potato dish.

Mashed Potato Churro Dogs & Mashed Potato Churro Bowls ⬇️ FULL RECIPE BELOW ⬇️ Mashed potatoes tend to get overlooked. They usually play second fiddle to whatever extraordinary meat creation they're being served alongside of and are often only there to mop up sauce. So we made it our mission to create a dish that finally puts mashed potatoes in the spotlight! When you mix mashed potatoes with choux pastry, all kinds of doors start opening up – these crispy recipes are going to make everyone question why they never gave mashed potatoes the time of day before!

You'll Need:
For the mashed potatoes:
- 2 lbs potatoes
- 3 egg yolks
- salt & nutmeg to taste
For the choux pastry:
- ¼ stick butter
- ⅓ cup water
- ½ cup flour
- 1 egg
- pinch of salt
Extra:
- muffin pan + piping bag with star-shaped nozzle for the churro bowls
- 4 hot dogs + 4 wooden skewers for the churro dogs
- oil for frying
Here's How:
1. Peel the potatoes and boil them in salted water. Add the egg yolks to the cooked potatoes, season with salt and nutmeg, and mash everything until smooth.
2. For the choux pastry, bring the water and butter to a boil, then add a pinch of salt. Add the flour and stir the mixture until it forms a ball.
3. Add the egg and continue to stir until a smooth mass forms.
4. Mix the mashed potatoes and choux pastry together and transfer the mass to a piping bag.
5. Turn a muffin pan upside down and grease it. Pipe the mashed potato choux pastry mixture around 3 muffin cups and freeze the muffin pan for 90 minutes.
6. Remove the mashed potato churro bowls from the muffin pan and fry them in hot oil for 2-3 minutes until golden brown.
7. For the mashed potato churro dogs, stick a wooden skewer through each hot dog and pipe the mashed potato choux pastry mixture around the hot dogs.
8. Fry the mashed potato churro dogs for 2-3 minutes until golden brown.
Serve your fried snacks with different sauces and condiments, a fresh side salad, or with some delicious pulled pork and gravy. 1. Potato Sandwich
You'll Need (for 3):
- 3 potatoes, peeled and cooked
- 4 tbsp bread crumbs from a baguette
- 2 tbsp grated parmesan
- salt & pepper to taste
- 2 eggs
- 6 slices of Gouda cheese
- 6 slices of salami
Here's How:
1.1 Heat some oil in a pan over medium heat while you cut the cooked and peeled potatoes lengthwise. Mix the bread crumbs with parmesan and season with salt and pepper. Dredge the potato slices in whisked egg and then the bread crumb mixture.
1.2 Fry the breaded potato slices on both sides. Place 2 slices of Gouda and 3 slices on each fried potato slice and then top with another fried potato slice.
1.3 If you want a crispier potato sandwich, let them sit in the pan for a while or pop them in a preheated oven set to 350°F for about 15 minutes.

2. Potato Egg Nest
You'll Need (for 4):
- 14 oz potatoes, peeled and cooked
- 4 tbsp bread crumbs
- 3 tbsp bacon bits
- 3 oz shredded cheese
- 1 tbsp chopped parsley
- salt & pepper to taste
- 4 egg yolks
- bread crumbs to garnish
Here's How:
2.1 Preheat the oven to 350°F. Mash the potatoes, season with salt and pepper, and mix in the bread crumbs, bacon, parsley, and about half of the cheese. Make 4 potato patties from the mixture, place them on a pan lined with parchment paper, and sprinkle bread crumbs on top.
2.2 Press a small glass into the center of each potato nest.
2.3 Spread the rest of the cheese in the holes, add one egg yolk to each center, and cook for 15 minutes.

3. Stuffed Duchess Potatoes
You'll Need (for 4):
- 14 oz potatoes, peeled and cooked
- 4 tbsp bread crumbs
- 4 oz grated parmesan cheese
- 2 egg yolks
- 1 tbsp parsley
- salt, pepper & nutmeg to taste
- 4 mini mozzarella pearls
- 4 tbsp bacon bits
Here's How:
3.1 Preheat the oven to 375°F and line a sheet pan with parchment paper. Mash the potatoes, mix them with the bread crumbs, parmesan, egg yolks, and parsley, and season with salt, pepper, and nutmeg. Spoon the potato mixture into a piping bag, pipe 4 circles onto the pan, and smooth the surfaces with a spoon.
3.2 Place a mini mozzarella pearl in the center of each potato circle, surrounded by some bacon bits.
3.3 Pipe the rest of the potato mixture around the mozzarella balls and bacon in the shape of a tower.
3.4 Cook the stuffed potatoes for 15 minutes and you'll be treated to a surprise at dinner!

Mashed-potato lovers, meet your new best friend: duchess potatoes. This decadent side is every bit as creamy, buttery, and fluffy as its stove-top counterpart, but has one outstanding difference: These spuds can be made completely in advance. (Seriously!) And while their name sounds fancy, these potatoes are a cinch to prepare. In fact, I think the hardest part about making this dish is waiting to eat it. Bring a little royalty to your holiday table and give this recipe a try!

INGREDIENTS
2 1/2 pounds Yukon Gold potatoes (about 10 medium), peeled and cut into 1-inch pieces
Salt and pepper
3 tablespoons cold unsalted butter, plus more for parchment
3 large egg yolks, divided
1/4 cup plus 2 teaspoons heavy cream, divided
Ground nutmeg
COOK'S NOTE
These mounds of soft, buttery spuds with crisp golden crusts have indented centers made to hold pools of gravy.
DIRECTIONS
STEP 1
In a large pot, cover potatoes with cold salted water by 2 inches. Bring to a boil; reduce to a rapid simmer and cook until tender, 15 minutes. Drain in a colander, let sit 5 minutes, then return to pot. Add butter and, with a potato masher, mash until smooth. Season with salt and pepper. Add 2 egg yolks, 1/4 cup cream, and pinch of nutmeg; stir until combined.
STEP 2
Preheat oven to 450 degrees. Line a baking sheet with parchment and lightly butter paper. Dollop mixture in 8 equal portions on sheet, 2 inches apart. Using the back of a spoon, create a small well in the center of each. Freeze until firm, 15 minutes. Whisk together remaining egg yolk and 2 teaspoons cream. Brush on potatoes and bake until golden, 15 minutes.

Easy Duchess Potatoes
Duchess Potatoes are a beautiful way to serve potatoes for any occasion

Ingredients:
3lbs of russet potatoes peeled and cubed
3/4 cup of half and half
2 TBS of butter
1/4 tsp of grated nutmeg
1/2 tsp pepper
1/4 tsp pepper
3 egg yolks
Directions:
Boil potatoes until fork tender. After you strain them add them back in the pot for 5 minutes to cook out any additional moisture. After that you can mash them with a potato masher or put them through a ricer. Add the half & half, butter, nutmeg, pepper, salt and egg yolks and mix well. Place in piping bag, using large star tip, and form mounds. Bake at 450 for 20 to 25, minutes until golden on top. Make sure to turn pans half way through cooking time.
