Sourdough Banana Bread
Not sure what to do with that sourdough starter that you need to cast off? Make this great banana bread recipe with that sourdough starter discard!
Ingredients:
280g (500 mL / 2 cups) all-purpose flour (or a mix with whole wheat)
1 tsp (5 mL) baking soda
Pinch salt
120g (125 mL / 1/2 cup ) butter, softened
150g (175 mL / 3/4 cup) granulated sugar
2 eggs
1 tsp (5 mL) vanilla
2 - 3 very ripe bananas, mashed
175 mL (3/4 cup) stirred down / degassed starter
125 mL (1/2 cup) toasted chopped walnuts (optional)
Our Original Recipe:
Method:
preheat oven to 180ºC (350ºF).
In bowl, whisk together flour, baking soda and salt.
In large bowl, beat butter and sugar until fluffy.
Beat in eggs one at a time, beating well after each addition.
Beat in vanilla.
Stir in mashed bananas and sourdough starter.
Add flour mixture to banana mixture and stir to moisten.
Add walnuts, if using and stir to combine.
Scrape into 8”x4” (1.5 L) loaf pan.
Bake for about an hour or until tester inserted in centre comes out clean.
Let cool in pan on rack.
Remove from pan and let cool completely on rack.
Makes 1 loaf, about 16 slices

???? Sourdough Multi Grain No-Knead Bread Recipe
How To Make Sourdough Multi Grain No-Knead Bread Recipe. Glen is still working on his bread making, and this weeks bread recipe is a hybrid sourdough and commercial yeast loaf cooked in Dutch ovens.
Ingredients:
For the Poolish:
450g Multi-grain bread flour
450g room temperature water
100g 100% hydration sourdough starter
For the final dough:
All of the poolish
500g Multi-grain bread flour
250g room temperature water
21g salt
3g instant dry yeast
Method:
Day 1, make the poolish.
In a large container mix together all of the poolish ingredients into a ragged wet dough.
Cover and let ferment at room temperature overnight.
Day 2, make the final dough.
In a large container mix together all of the poolish, and all of the day 2 ingredients into a ragged wet dough.
Cover and let stand at room temp for 30 minutes.
After 30 minutes fold the edge of the dough to the centre, turn 45º and fold the edge of the dough to the centre.
Continue this folding for 6-9 times, cover and let stand at room temp for 30 minutes.
After 30 minutes repeat the folding procedure, then cover and let rise to 2½ its original volume.
This rise could take 2-3 hours.
Prepare two proofing baskets / banneton.
Lightly flour your work surface and scrape the dough out onto it.
Flour your hands and using a bench scraper, divide the dough into two pieces.
Shape each piece into a fairly tight ball and then place seam side down into the bannetons to prove.
Cover with a couche or plastic and let prove at room temp for about an hour.
Preheat oven to 240ºC (475ºF), along with two cast iron Dutch ovens*.
When the loaves are proved, carefully flip them out onto a floured surface so the seam side is now facing up.
Carefully place the loaves seam side up into the Dutch ovens, put the lid on, and place in the oven.
Bake, covered, for 30 minutes.
Remove the lids at 30 minutes, and continue baking for another 10 - 20 minutes.
This second baking time will depend on your oven, and your preference for crust colour.
Loaves are done when internal temp is 190ºF - 200ºF.
remove loaves from the Dutch ovens, and let cool on a rack for at least 30 minutes before slicing.
*If you have only one Dutch oven, you can bake these one after the other by proving the second loaf for 15 minutes at room temp, then placing in the fridge.
After baking the first loaf, place the Dutch oven back in the oven to re-heat for 10 minutes, and take the second loaf from the fridge.

Ingredients I Used :
Butter 7 Tbsp melted butter
Sugar 4 Tbsp (OPTIONAL- Jiffy is already sweet)
1 and 1/4 cups buttermilk
3 eggs
2 boxes jiffy
Honey butter glaze: honey & butter

Bake @ 350 degrees for 40-45 minutes depending on your oven. Insert a toothpick in the middle at the 40 minute mark and it’s done if it comes out clean!

Banana Bread, Depression Recipe. Banana bread is a slightly sweet moist nostalgic treat that will fill your mind with wonderful memories while it delights you tastes buds and fills your belly without breaking the bank.
This recipe will make 1 loaf or about 2 dozen muffins. You can use very ripe bananas in this recipe. It is easy enough for beginners. Banana bread dates back to the mid 1800’s and became popular in the United States in the 1930’s during the Great Depression. It was also popular in the 1950’s after the recipe was reintroduced by Chiquita.
This video is for basic banana bread but it is easy to really dress it up with a few nuts and some crumb topping. A little cinnamon really compliments the flavor. Enjoy it warm with a little butter or toast the leftovers for a quick breakfast.

Newfoundland Molasses Raisin Bread
Glen has been testing and researching Malt Bread / Malt Loaf Recipes - but this Newfoundland Molasses Bread Recipe keeps popping up. So he thought he'd give the recipe a try, because he loves molasses recipes!
Ingredients:
125 mL (½ cup) water
175 mL (¾ cup) milk
85g (90 mL / 6 Tbsp) butter
125 mL (½ cup) molasses
500g (875 mL / 3 ½ cups)all purpose flour
2 mL (½ tsp) coarse salt
7 mL (1 ½ tsp) cinnamon
8g (2 tsp) dry yeast
1 egg
2 mL (½ tsp) pure vanilla extract
220g (375 mL / 1½ cups) raisins
Method:
Place the water, milk, butter, and molasses in a pot over extremely low heat.
Stir and heat, just until butter is barely melted; about 90ºF.
In a stand mixer stir together the flour, salt, cinnamon, and yeast.
Slowly stir in the water / molasses mixture, allowing the bread hook to bring together a dough ball.
Add the egg, vanilla, and raisins.
Knead for 6-8 minutes.
Turn out onto a floured surface and knead a few times, just to make sure you've reached the right texture.
Place in a bowl and cover - allow to rise until double in size.
Preheat oven to 180ºC (350ºF).
Punch down and divide into 6 balls.
Form and place 3 balls into each 8 x 4 x 2½ baking dish.
Cover loosely with plastic wrap and allow to rise to the top edge of the dish.
Uncover and bake for 40-50 minutes - internal temp will be 195ºF.
Allow to cool slightly in the dishes.
