How To make Doc's Red Beans and Sausage
1 lb dry kidney beans
1 1/2 lb smoked sausage, preferably spicy
up to 2 pounds
1 cup chopped celery
1 lg bell pepper :
chopped
2 medium onion chopped
5 cloves garlic :
chopped
1 teaspoon chili powder
2 bay leaves
pinch oregano pinch thyme
Soak beans overnight or 3 -4 hours. Wash beans and place in large pot (4 quarts) that can be covered. Add water, approximately 3 pints to 2 quarts. Cut sausage into 1 inch pieces (crosswise on the tube) and add to beans. (If the sausage is very fat, cook separately for about 5 minutes in boiling water and drain before adding to beans. ) Bring beans and sausages to boil; add chopped vegetables and spices. Cook 3-4 hours, covered, over low heat until beans are tender. Add water as needed. Add salt and red pepper to taste. The amount needed will depend on spices in sausage and your individual taste. Remove and crush 4 or 5 large servings spoons of beans and return to pot to thicken soup. Add water as necessary to provide for a soupy texture. Serve over fluffly rice with garlic bread and green salad.

This is a very simple and light Italian bean soup that is quick and easy to prepare. This easy bean soup is so tasty that you will definitely want more.
Recipe:
2 carrots
2 small onions
1 large onion
2 garlic cloves
1.5 liters (6 glasses) water
3 black peppercorns
olive oil
1 celery stalk
1 can of chopped tomatoes
2 cans of white beans
100 g spinach
2 teaspoons dried basil
1 teaspoon dried oregano
salt to taste
pepper to taste
100 g spinach

???? Ingredients:
190g | 1cup green lentils
1 onion
1 carrot
1 garlic clove
170g | 1 cup cooked rice
1tsp ground coriander
1tsp Italian herbs
salt
???? Sauce ingredients:
1tbsp tomato puree
1tsp sugar
1tsp flour
salt & black pepper to taste
250ml | 1cup water
????????Cooking tips:
❗Feel free to add your favourite herbs and spices to the recipe to get your favourite flavour.
???? Method:
Soak 190g | 1 cup green lentils in water for 3 hours.
Add drained lentils to a bowl.
Mash with hand blender.
Chop 1 onion.
Transfer chopped onion into a lightly oiled frying pan.
Peel and grate 1 carrot.
Add to the onion and cook about 5 minutes.
Chop 1 garlic glove.
Combine well.
Add 170g | 1 cup cooked rice to the mashed lentils.
Add cooked carrot and garlic mixture.
Season with 1tsp ground coriander, 1tsp Italian herbs, salt to taste.
Mix until combined and transfer to the fridge for 10 minutes.
Shape into small balls.
Heat a little olive oil in a non stick skillet.
Fry the lentil meatballs for about 5 minutes on each side, or until golden and crispy.
In a mixing jar combine 1tbsp tomato puree, 1tsp sugar (optional), 1tsp flour, a pinch salt and black pepper to taste, 250ml | 1 cup water.
Pour the sauce and cook lentil meatballs under the lid for about 20 minutes.
