How To make Lima Beans and Sausage
4 cups shelled fresh lima beans
2 cups sliced smoked sausage
3/4 cup onion -- finely chopped
2 tablespoons bacon drippings
1 teaspoon salt
1/2 teaspoon black pepper
Put beans in 3 quart pot and cover with water. Bring to a boil and cook until t ender. While beans are cooking, put bacon drippings, onion and sausage in skill et and cook unyil light brown. When beans are tender, add sausage, onion, salt and pepper to boiling beans. Cook on medium heat for 10 minutes.

This is a recipe from April 2018. I have a basic recipe for ALL beans, blackeye peas, lima, pinto, and red beans. I EVEN prepare my frozen ones this way as well.
Don't miss the step of adding bay leaves to these beans. It REALLY amps up the flavor. You can add the meat of your choice OR you can use the GOYA ham package to substitute for the meat; however, you want to saute your vegetables before adding to the beans. It REALLY takes this dish to a NEW level!!!!

1 lb. Large Dried Lima Beans (Soak overnight!)
1 large Smoked Turkey Leg or Ham Shank
8 - 9 cups Chicken Stock or Broth, can use 2 tbsp of either Better than Turkey or Chicken Bouillon
Salt and Pepper to taste
How to Hot Flash Beans
Clean and sort your beans.
Rinse in a colander with cold water. Add the beans to a large pot and cover them with about 2 inches of water. Bring the water to a boil over high heat, leave the pot uncovered and cook the beans for about 5 minutes. Remove pot from the heat and soak the beans. Let the beans soak in the hot water for 1 hour. Drain the beans into a colander, rinse and then cook according to your this recipe. Enjoy!
