My son says it's just the best grilled chicken recipe for making chicken wraps and a grilled chicken sandwich! I prefer this grilled chicken with rice. I actually have a Mexican Rice Recipe that goes perfectly with this Mexican style chicken. I make the grilled chicken and rice, along with my homemade guacamole for a Mexican dinner night! My Mexican rice recipe with cilantro, jalapeno pepper and cheese, along with some other incredibly tasty ingredients, goes perfectly with this grilled chicken. I'm always looking for a reason to make homemade guacamole anyway and it's great with the grilled chicken and rice. I make a tequila lime marinade with cilantro, lime, spices, garlic, honey, jalapeno pepper and a nice white tequila. The combination smells incredible! The skinless, boneless chicken breasts are sliced thin and placed in the marinade and then refrigerated for at least 30 minutes. Then it's grill time! The marinade is cooked to make an incredible rich and flavorful sauce for the chicken. With cilantro and lime in the sauce, along with some orange juice, for a special touch, and that white tequila, it's just jam packed with flavor! Chicken Diane-ish Recipe - Breaded Chicken In Sauce Recipe - Glen And Friends Cooking
Ok, ok, ok, ok. Yes in the strictest sense of the concept this is not Chicken Diane. It borrows elements from the famous dish Steak Diane and integrates some other ideas to create a breaded chicken cutlet recipe, that is smothered in a Cognac, cream and mushroom sauce similar in execution to a Steak Diane recipe.
Ingredients:
2 eggs, beaten
60 mL (¼ cup) flour
60 mL (¼ cup) panko
Salt and pepper to taste
15-30 mL (1 - 2 Tbsp) butter
15-30 mL (1 - 2 Tbsp) oil
2-4 Chicken breasts
2 shallots, minced
125g (¼ lb) mushrooms, sliced
60 mL (¼ cup) Cognac or brandy
10 mL (2 tsp) Dijon mustard
60 mL (¼ cup) 35% heavy cream
60 mL (¼ cup) chicken stock
Fresh Thyme leaves
Method:
Pre-heat oven to 180ºC (350ºF).
Setup 3 large plates or bowls; one with flour (seasoned with salt and pepper), one with the eggs, and one with the Panko.
Dredge the chicken breast in the flour, then the egg wash, then the Panko - completely covering it at each step.
In a large pan, heat up the butter and the oil.
Pan fry the chicken browning on both sides, place on a baking sheet and stick in the oven to continue cooking while you make the sauce.
Add the shallots to the pan and cook over moderate heat, until softened.
Add the mushrooms, season with salt and pepper and cook until they release all of their moisture.
Add the Cognac and carefully ignite to flambé.
When the flames subside, stir in the stock, thyme, mustard, and cream.
Return the chicken and any accumulated juices to the pan and turn to coat.
Simmer until heated through, about 1 minute.

Steak Diane, a massive hit during the 70's is simple to make and uses only standard ingredients, yet the massive hit of brandy and cream, what's not to like! Although you can use whatever steak you can afford, the dish cries out for a really nice steak such as tenderloin or New York strip. A great retro recipe that's as good today as it ever was

For the marinade:
1/4 cup vegetable oil (60ml)
1/4 cup fish sauce (60ml)
1 Tablespoon Brown Sugar (15g)
1 Tablespoon rice vinegar (15ml)
4-5 large cloves garlic , finely minced or crushed
1/2 teaspoon fresh ground black pepper
For frying:
1 1/4 cups all-purpose flour (170g)
1 teaspoon baking powder (5ml)
1.5 cups cold water (360ml) , about
