Sri Lankan Devilled Prawns (hot and spicy!!!)
It’s time for another amazing Sri Lankan recipe and this one is packing the heat! These Devilled Prawns are spicy, tangy, and finger-licking good.
INGREDIENTS
2 tbsp water
2 tsp cornstarch
2 tbsp ketchup
1 tbsp soy sauce
1 tbsp sugar
1 tbsp white vinegar
1 lb size 16/20 prawns/shrimp (deveined, shell on)
Juice of ½ lime
3 tbsp canola oil, divided
1 banana pepper, cut into thick rounds
1 medium white onions, cut into large squares and separate
1 tbsp minced garlic
1 tbsp minced ginger
2 tsp crushed red chili flakes
1 tbsp Sri Lankan Chili Paste (or substitute Chinese XO sauce)
1 large tomato, cut into large chunks
Kosher salt to taste
Black pepper to taste
METHOD
To create the sauce, add water and cornstarch to a bowl and whisk until the cornstarch is well dissolved. Then add ketchup, soy sauce, sugar, vinegar and salt to taste. Mix well, and set aside.
Season prawns/shrimp with lime juice, and salt and pepper to taste. Mix well.
Heat a large wok on high heat. Once hot add 1 tbsp of oil. Add shrimp, and stir-fry for 1-2 minutes or until just cooked through. Transfer to a plate.
Add another tbsp of oil to the wok and add banana pepper and onions. Stir-fry for 30 seconds or until the veggies are tender but still crisp. Transfer to the plate with the shrimp.
Reduce the heat to medium and add the remaining 1 tbsp of oil. Then add in garlic and ginger and saute until fragrant. Add the chili flakes and XO sauce, and saute for 15-20 seconds to toast.
Pour in prepared sauce and increase heat to high. Once bubbling, thick and glossy, add in cooked shrimp, banana peppers, onions, and tomato chunks. Mix well, and remove from the heat immediately.
Serve on its own, or with hot white rice on the side. Enjoy!
