Munchies: Dale Talde
You may know Dale from Top Chef, or if you live in Park Slope, you might have seen him when you walk by the big windows on 7th Ave. that act as a portal into Talde, his temple of Asian-American cuisine. In this episode, Dale and his business partners John Bush and Dave Missoni set out on a quest to show you that there is no need to cross into Manhattan to quench your desire for late-night feasting. The crew stops at Franny's on Flatbush Ave. to eat some of the best Italian food anywhere, and then it's off to Pearl's Social & Billy Club in Bushwick where Dale secures his buzz in preparation of cooking up a dream Asian-American feast.

Briskit - Dale's Seasoning
This is the easiest brisket to make and oh my goodness it is delicious!! All you need is a brisket and some Dale's seasoning along with some Saran or Glad wrap and some foil. Cook it at 250 degrees until it is done. This was about a 5-6 pound brisket and I cooked it for 7 hours and it was just perfect. So tender and juicy and flavorful. I kept the drippings and made a cornstarch slurry with a tablespoon of cornstarch and about 1/4 cup water. Add the slurry to the drippings when it comes to a slow boil. Whisk it good and its ready. The gravy is strong and flavorful so a little goes a long way..Enjoy!!!
