Update 2011: I'm glad these videos have helped so many people out! To the more sensitive, yes, it is a very messy college kitchen that was shared by 4 college students. To make a clean area for this video most of the mess was moved into the sinks where the people who made them dirty would, one day, clean them.

You can't win them all, this recipe ended up coming out with a big ball of dough in the middle. I tried it again and had a much smaller part be doughy. I'll do another video when I figure out the right sugar/salt/yeast balance.

25 gr ekşi ana maya
50 gr un
50 gr su
Hamur Mazemeleri:
500 gr çok amaçlı buğday unu
330 gr su
10 gr tuz
25 gr eksi ana maya ile
50 gr un ve
50 gr suyu karıştırarak ön mayayı hazırlayın.
Ön maya iki katı kabarınca 500 gr un ile 330 gr suyu karıştırın bir saat bekletin. Bir saat sonra 10 gr tuz, ön mayayı ekleyin. Hamur güzel bir yapı alana kadar yaklaşık 10 dak yoğurun. Yağlanmış kapaklı bir kaba koyun ve 45 dak aralıklarla hamura dört kenarından zarf gibi tutarak 3 katlama uygulayın . Katlamalardan bir saat sonra şekil verin ve dolaba kaldırın.
18 saat soğuk mayalandırdıktan sonra , yarım saat önceden ısıttığınız döküm tencerede kapağı kapallı 240 derece 25 dk pişirin, kapağı açıp 200 derecede 15 -20 dk daha pişirin . Afiyet olsun????????

25 g sourdough starter
50 g bread flour
50 g of water
Dough Ingredients
500 g all purpose flour
330 g water
10 g salt
Instructions
At night , I prepared the levain by mixing 25 grams of starter with 50 grams of bread flour and 50 grams of water. When my levain gets almost doubled in the morning, I mix the all flour with water . 1 hour later added salt and levain kneaded it until the gluten window formed. I put my dough in oiled container with lid . After one hour I made first strech and fold. Then with a 45 minutes in between I did again two strech and folds After one hour rest on the counter make a big ball and let it rest half an hour . Then gave them shape and put it in the banetton baskets . I baked the dough, which had been cold fermentation for 18 hours, in a preheated oven .

Un ile suyu karıştırın. Bir saat sonra iki katı kabaran ekşi mayayı, trüf tozunu, trüf yağını ve tuzu ekleyip hamur güzel bir yapı alana kadar yaklaşık 6-7 dak yoğurum . Hamuru yağlı kapaklı bir kaba aktarın. Bir saat sonra ilk katlamayı yapın. 45 dak aralıkla hamura dört kenarından zarf gibi tutarak 3 katlama uygulayın.
Katlamalar bittikten bir saat sonra şekil vererek bambu sepete alın ve dolaba kaldırın. Ertesi gün pişirmek için kullanacağınız döküm tencere ve ya borcamınızı yarım saat boş şekilde 250 derecede ısıtın. Hamuru dolaptan çıkarıp yağlı kağıda aktarın , jiletle kesi atıp tencereye aktarın . 250 derecede kapaklı 25 dk pişirin, kapağı açın 200 derecede 15 dk daha pişirin.

Here it is folks: the 7-minute-recipe-less-video you didn't ask for! We thought about showing how to make our favorite pizza dough, but Ju is only getting started in the sourdough arena, and Dak couldn't find bread flour for her favorite recipe.
