Stop throwing your SOURDOUGH STARTER make the easiest recipes. In this video I show you how to use your sourdough starter discard in 2 day to day recipes. Find the easiest recipes with sourdough starter discard as a main ingredient. The recipes that I share in this video are: sourdough caramel apple cake and sourdough pecan and basil crackers. Magic happens when you decide to make your own bread and sourdough starter. I use sourdough starter for 2 reasons, because I like the tangy flavor in bread and recipes or because I don’t have commercial active yeast on hand.
✨INGREDIENTS
Candy
~ 1 cup of white sugar.
~ 2 tbsp of water.
~ 1 tbsp lemon juice.
~ 1 tbsp vegetable butter.
~ ¼ cup of vegetable milk.
~ 2 small green apples.
~ 1 small red apple.
For almond and apple flour cake
~ 1 cup of almond flour.
~ ½ cup of oatmeal.
~ 4 tbsp brown sugar.
~ 1/2 tbsp ground cinnamon.
~ ¼ cup of vegetable oil.
~ ½ tsp vanilla.
~ 2 tbsp ground flaxseeds.
~ 1/2 cup sourdough.
For pecan and basil cookies
~ 1 cup whole wheat flour.
~ ¼ cup of rye flour.
~ ½ cup of ground pecan.
~ 1 cup sourdough.
~ 1 tbsp basil.
~ 1/2 tbsp minced garlic.
~ ½ tbsp of salt.
~ 2 tbsp of vegetable oil.
~ ½ cup of vegetable milk.
Tofu cream with green olives.
~ 1 cup cream of tofu.
~ ½ cup green olives, crushed or finely
chopped.
~ 1 tbsp fresh or dried parsley.
~ A pinch of salt and cayenne pepper.

Applesauce Sourdough Cake | Long Fermented Vegan Cake in 2019
Applesauce Sourdough Cake:
(Dairy-Free, Egg-Free, Refined Sugar-Free)
The day before baking:
1c sourdough starter + 1c applesauce* + 2c flour + 2 TBSP water; mix ingredients well into a thick batter. Allow to ferment overnight for 12-24 hours in refrigerator (at least 6 hours at room temperature in a warm, dry place around 24 c/ 77 f)
* I use Unsweetened Homemade Applesauce
Baking day:
Ingredients:
• 1/2c coconut oil, 1/2c Maple Syrup
• 2 flaxseed eggs (2 tbsp ground flaxseed +6 tbsp water)
• 1 tsp vanilla, ½ tsp salt, 1 tbsp all spice **
• 1 tsp baking powder, 1 tsp baking soda
• 1 tbsp apple cider vinegar
Instructions:
• Add all ingredients to fermented sourdough batter and mix well.
• If the dough is too thick, add milk or water as needed (I use Almond Milk around ¼ Cup)
• At this point you can add 1c Dried fruit or Nuts you like.
• Have a greased 9x13” pan ready. Also have your oven preheating to 350.
• Pour batter into prepared cake pan. Spread gently till evenly distributed over the pan. Bake for 30 minutes, or until a toothpick comes out clean
• I like it plain; my husband likes to drizzle with maple syrup. Allow to cool for at least 10 minutes before slicing and serving Leftovers can be placed in the freezer, wrapped in wax paper and aluminum foil and eaten later.
** all spice or any kind you like (cinnamon, nutmeg, cloves, ginger)

Sourdough Carrot Cupcakes

Ingredients
Carrot Cake
1 1/2 cup vegetable oil
2 cups white sugar
1 cup sourdough starter discard/ unfed
3 eggs
1 cup canned crushed pineapple drained
2 cups carrots grated
1/2 cup golden raisins
2 teaspoons vanilla
2 1/2 cups all purpose flour
2 teaspoons cinnamon
1/4 teaspoon allspice
1/2 teaspoon salt
1 teaspoon baking soda
Cream Cheese Frosting
8 ounces cream cheese room temperature
12 ounces butter melted
4 cups powdered sugar
pinch salt if using unsalted butter
3 teaspoons vanilla
2 tablespoons milk or cream if icing is too thick
Instructions
For the Cupcakes:
Preheat the oven to 350 and prepare cupcake pans with cupcake liners. This recipe makes either 24 very full cupcakes or 28 smaller ones
Combine the oil and sugar, beating well. Add the sourdough starter and combine more gently. Add the eggs one at a time, beating well after each addition. Add the vanilla.
Reduce your mixer speed and add the carrots, pineapple, and raisins
Combine the flour, salt, baking soda, and spices in a separate large bowl. Add them to the batter one cup at a time, gently stirring after each addition.
Pour batter into prepared cupcake pans and bake fort 25 minutes. A cake tester should come out clean, and the cupcakes should be bouncy when pressed.
Cool completely on wire rack before frosting.
For the Cream Cheese Frosting:
Using a stand mixer or hand mixer, beat the cream cheese, vanilla, and melted butter. It may seem lumpy at first. Add the salt if using unsalted butter, otherwise it is not needed.
Add the powdered sugar one cup at a time, beating slowly at first then increasing the speed.
If the frosting seems thick, add milk or cream a teaspoon at a time. If it seems to thin, put in the fridge for 30 minutes.
Recipe Notes
Store frosted cupcakes in the fridge, unfrosted ones at room temperature. Unfrosted cupcakes also freeze well for a month. If baking this recipe as a cake, use 2 8 inch round cake pans and bake for 45 minutes.

If you’re a fan of carrot cake and looking for a fun way to use up sourdough discard, I’ve got a recipe for you ⬇️ Here’s how to make this Vegan Sourdough Discard Carrot Cake:
✨ 1 cup all-purpose flour (I used @kingarthurbaking)
✨ 1 cup coconut sugar (I used @originenaturals)
✨ 1 teaspoon ground cinnamon (I used @originenaturals)
✨ 1 teaspoon baking soda
✨ ½ teaspoon salt
✨ ½ cup golden raisins
✨ ½ cup sourdough [discard]( straight from the fridge
✨ ½ cup water
✨ ⅓ cup coconut oil
✨ 2 teaspoons [vanilla extract]( (I used @originenaturals)
✨ 1 tablespoon apple cider vinegar
✨ 1½ cups shredded carrots
✨ 1/2 cup crushed walnuts (extra for topping, if desired)
Preheat oven to 350F and grate your carrots. Add all dry ingredients to a mixing bowl, and then add all wet ingredients. Mix until well combined, pour into a greased baking pan, and add a walnut topping (if you want). Bake for ~30mins, until a toothpick comes out clean. Let it cool, slice, serve and enjoy!

I Bake a Sourdough Carrot Cake
Today I baked a sourdough carrot cake with cream cheese and pecan frosting. The recipe I used is in the King Arthur Flour 200th Anniversary Cookbook. It's in the sourdough section. I used my own sourdough discard in this recipe. If you don't know about sourdough, you will need to make it first. There is a whole section on it in this book. I am not teaching or sharing my own recipe here. I just hope to share what I am doing and inspire you to try your own homemade cake for your loved ones soon.
