Recipe for Daffodil Cake
Grandma VT's recipe, given to me by Auntie L.
Tips/General Info:
Use Cake Flour
Eggs should be at room temp
Un-greased Bundt Pan
Cool upside down on wire rack
Bake 1 hour at 325 degrees
White Batter: (Team White)
6 egg whites- beat until stiff, approx. 10 min.
Add: 1/2 tsp.Cream of Tartar
Stir in:
3/4 Cup Sugar
1/2 Cup Flour- sifted
1/2 tsp. Vanilla
Yellow Batter: (Team Yellow)
6 egg yolks beat with
3/4 Cup Sugar for 3 min.
Add:
3/4 cup Cake Flour- sifted with
1 tsp. Baking Powder
1/4 cup hot/boiling water
1/2 tsp. Vanilla
Put batter in to the Bundt pan, alternating
Frosting:
Boil 1 cup Milk with 1 heaping tsp. Corn starch, then let cool and skim top layer off.
Beat 1/2 Cup Butter (room temp) and 1/2 Cup Crisco with
1 Cup Granulated Sugar
Beat for 10-15 min until little or no granules.
Add cooled milk and 1 tsp. Vanilla.

How To Pipe a Daffodil - Easy buttercream daffodil flower piping tutorial
Follow along with our step by step Buttercream daffodil piping tutorial and learn how to make these easy buttercream flowers! Daffodils are one of my favourite spring flowers, and they make beautiful buttercream decorations for a spring flower cake or cupcakes! These flowers are also called jonquils. For this flower piping tutorial you will need a # 104 petal piping tip with a medium consistency yellow buttercream as well as a # 1 (or any small round tip) and a small amount of white buttercream for the center of your daffodils. These can be piped onto a flower nail, chilled and placed onto a cake or directly onto a cupcake for an easy spring daffodil cupcake!
To begin, attach a square of parchment to a flower nail (if using). With the narrow end of your # 104 tip at the center of your flower nail or cupcake and the wide end facing out, begin piping the petals by applying pressure and moving out toward the outside edge of your piping surface in an arching motion, while gently turning your flower nail or cupcake. Next, rock (pull) your tip back down toward the center, while turning your nail or cupcake and applying pressure to finish forming your petal. Continue until you have 6 petals. For the last petal lift your tip up slightly so that you don't drag in through the first petal that you piped.
Switch to your # 1 or small round tip. Pipe a small mound in the center. On top of this mound pipe 6-10 long stamen for the middle of the daffodil. Switch back to the # 104 tip and with the narrow end up, and the wide end tucked right next to your center mound apply pressure while slightly wiggling your piping tip and spinning your flower nail to fully encircle the center of your flower with the delicate daffodil cup petal. Allow these to set in the fridge for 20 minutes to firm up before using to decorate your daffodil cake! I have included my buttercream recipe below, but any American buttercream would work. Feel free to use your favourite buttercream recipe!
Buttercream Recipe:
Ingredients
1/2 Cup butter softened to room temperature
2 Cups powdered sugar
1 Teaspoon vanilla extract
1-2 Tablespoons milk
Directions:
In a large bowl if using a hand mixer or in the bowl of your stand mixer cream butter on medium low speed for 2-3 minutes or until fluffy and pale in colour. Add 1/2 of the powdered sugar and mix for 2 minutes. Add remaining powdered sugar and mix for another 2 minutes. Your buttercream should be fluffy, pale and thick at this point. Add vanilla and 1 tablespoon of milk. Mix well. If the buttercream is still too thick/stiff add another tablespoon of milk and continue mixing. You will want a medium consistency buttercream to pipe your flowers with! Add food colouring if using.

Daffodil Cake Recipe:
Ingredients:
1 c cake flour
3/4 c plus 2 Tbsp sugar
12 egg whites
1 1/2 tsp cream of tartar
1/4 tsp salt
3/4 c. sugar
6 egg yolks
1 1/2 tsp vanilla extract
1/2 tsp almond extract
Directions:
Preheat oven to 375 degrees. Stir flour and 3/4 c sugar plus 2 Tbsp together and set aside.
In large stand mixer bowl, beat egg whites, cream of tartar and salt till foamy. Add remaining 3/4 c sugar, 2 tbsp at a time, beating on high speed until meringue holds stiff peaks. In small mixer bowl, beat egg yolks until they're very thick and lemon colored. Gently fold vanilla & almond extracts into meringue.
Sprinkle flour/sugar mixture a little at a time, over meringue, gently folding until just mixed. Pour half the batter into egg yolks and gently mix. Alternate white and yellow batters into ungreased tube pan. Gently cut through batters to swirl.
Bake on bottom rack in oven for about 40 minutes until top springs back which lightly touched. Remove from oven and invert pan on funnel or on pan's feet until completely cooled.
Raspberry Sauce:
3 c fresh or frozen raspberries
2 tsp cornstarch
1 Tbsp water
1/4 c sugar
1 tsp lemon juice
1/2 -1/4 tsp vanilla (optional)
Mix the water and cornstarch together to make a slurry. Then combine cornstarch mixture, berries, sugar and lemon juice in a small saucepan over medium heat. Stir the mixture periodically as it comes to a boil. Let boil for 3 minutes, stirring occasionally. Remove from heat and add vanilla extract. Sauce is ready if you want to leave in the seeds. Otherwise, push mixture through a fine mesh strainer to remove the seeds. Sauce will thicken as it cools. Enjoy
