How To Make Chicken Chilli Garlic Curry - BIR Ultimate Indian Cuisine
Chicken chilli garlic curry is a real favourite at curry houses around the UK. This recipe can be found in my cookbook 'The Curry Guy' where I showed the recipe made for four people. You will also find a list of ingredients below. In this video, I do a curry house portion of the recipe which will feed one to two people. This one is super garlicky and spicy too. It's one I make all the time at home. Once you have the base sauce made, it can be cooked in about 10 minutes!

INGREDIENTS
2 - 3 tbsp rapeseed oil
8 cloves garlic - slivered
1 onion - finely chopped
Salt
4 bird's eye chillies - finely sliced (more or less to taste)
1 tbsp garlic and ginger paste
Base sauce (about 300ml or 1 1/4 cup in total)
1 tsp Kashmiri chilli powder
1 tbsp mixed powder
1 tbsp Tandoori masala
Tomato puree ( about 70ml or 1/4 cup)
400g (just under 1 lb.) tandoori chicken
Chillies to taste
3 tbsp chopped coriander (cilantro)
A small handful of dried garlic flakes (optional)
1/4 tsp Kasoori methi (dried fenugreek leaves)
Salt to taste

This is probably the only dish that can make me smile after a 12-hour cramming session. Add your protein of choice to make it more balanced–I’m keeping it low-budget with a savory marinated egg.
Ingredients (serves 1 hungry student)
-6 oz dried knife-cut noodles
Sauce
-1Tbsp red pepper flakes, or 2 Tbsp if you’re feeling spicy
-4 garlic cloves, minced
-3 scallions, green parts only, thinly sliced
-1½ Tbsp sugar
-1 Tbsp curry powder
-1 Tbsp soy sauce
-1½ Tbsp black vinegar
-1 tsp dark soy sauce
-1 tsp sesame oil
-⅓ cup neutral oil, very hot
For Garnish (optional)
-1 egg, fried or boiled
-1 Tbsp fried onions or garlic
-Fresh cilantro leaves, torn
-1 scallion, very thinly sliced lengthwise
-White or black sesame seeds
-Chili oil
Preparation
Cook the noodles according to the package instructions, then drain. I cooked mine a little under to keep the chew and bounce!
Make the sauce: In a medium heatproof bowl, combine the red pepper flakes, garlic, scallions, sugar, curry powder, soy sauce, black vinegar, dark soy sauce, and sesame oil. Pour in the hot oil and enjoy the sizzle!
Add the noodles to a large serving bowl, pour the sauce over, and toss until well-coated. Top with your favorite garnishes.

45 Minute Lamb Curry (Succulent and tender!)
This lamb curry is melt-in-your-mouth tender and features the flavours of aromatic fennel and fiery chili.
The best part is that it only takes 45 minutes, and it's a curry you don't have to babysit on the stove. Which means, more time to do other things :D
Perfect paired with hot basmati rice, or naan/rotis.
INGREDIENTS
2 lbs boneless lamb shoulder, cubed
¼ cup plain yogurt
4 tsp ground fennel
4 tsp kashmiri chili powder
1 tsp turmeric
1 medium onion, chopped
4 cloves garlic
2 inches ginger, sliced
4 tbsp canola oil
1 bay leaf
1 small piece cinnamon
4 green cardamom
3 cloves
½ cup strained tomato sauce (passata)
2 tsp ground coriander
2 tsp ground cumin
Salt to taste
½ cup water
Fresh chopped coriander to garnish
METHOD
In a large bowl marinate lamb in yogurt, 2 tsp ground fennel, 2 tsp chili powder, turmeric, and salt to taste. Mix to combine, and allow to marinate for as long as it takes to prep the other ingredients.
To a food processor/blender add onions, garlic and ginger, and blend until smooth.
Set Instant Pot to saute mode, and add oil. Once hot, add bay leaf, cinnamon, cardamom, and cloves and saute for 10-15 seconds or until fragrant. Add onion mixture and cook for 5-6 minutes stirring often until slightly golden.
Pour in strained tomato sauce and seasoning with remaining fennel, chili powder, ground coriander, ground cumin and salt to taste. Cook tomato mixture down until the oil begins to separate along the edges, and the tomatoes become jammy in texture.
Add marinated lamb, and mix to coat in cooked down tomatoes. Cook for 5-6 minutes to seal all sides of the lamb.
Add water, and set Instant Pot to the pressure cook setting on high. Set the timer to 25 minutes.
Once ready, allow pressure to naturally release. Reduce curry on saute mode to desired consistency.
Garnish with fresh coriander and serve with hot basmati rice, naan, or rotis. Enjoy!

Ingredients:
900g (2 pounds) chicken breast, cut into cubes
2 onions
3 garlic cloves
1 tablespoon grated ginger
3 tablespoons vegetable oil
2 tablespoon curry powder
1.5 teaspoons salt
1/2 teaspoon black pepper
4 large tomatoes, chopped
1 can (400g/14oz) coconut cream/milk
½ teaspoon garam masala (optional)
Coriander, chopped – for garnish
Directions:
1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally.
2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes.
3. Add coconut milk/cream, season with garam masala and salt, stir, and cook until lightly thickens.
