How To make Curried Beef

Directions:
Wipe beef well. Mix flour and curry powder. Coat meat cubes with flour mixture. Place meat in crockpot. Add garlic, raisins, sliced apples, onion, salt and pepper. Pour in broth and stir to blend. Cover and cook on Low for 8 to 10 hours or on High for 4 to 5 hours; until meat is tender.
Before serving, stir in additional curry powder to taste (up to 1 tablespoon) and chopped apples. Serve over hot fluffy rice.
Variation: 3 pounds cubed lean lamb may be substituted for the beef.

A luscious mild curry with fall-apart beef and bell peppers. We let this easy beef curry cook slowly in the slow cooker. Just a little up-front prep, then you can leave it to cook to perfection.
I'm using store-bought curry paste to keep this recipe as simple and easy as possible.
I use a shop-bought Tikka Masala curry paste for this recipe - which is usually quite mild. You could also use balti, jalfrezi or rogan josh pastes - which tend to be fairly mild too. If you're after something hotter, use madras or Thai red curry paste. **Be sure to use curry paste, NOT curry sauce. The paste is concentrated - used for the base of a sauce, whereas the sauce is usually a finished version of a curry sauce**.

Ingredients:
▢2 tbsp sunflower oil or ghee
▢½ tsp salt
▢½ tsp black pepper
▢1.5 kg (3 ⅓ pounds) braising beef
▢1 large onion - peeled and chopped
▢2 red bell peppers - deseeded and roughly chopped
▢4 cloves garlic - peeled and minced
▢2 tsp minced ginger
▢2 heaped tbsp curry paste*
▢1 beef stock cube - crumbled
▢400 g (14 oz) tin finely chopped tomatoes
▢2 tbsp tomato puree (paste)
▢2 tsp sugar
▢400 ml (14 oz) tin full fat coconut milk
Optional:
▢3 tbsp cornflour (cornstarch) mixed with 6 tbsp cold water
To Serve:
▢A handful of chopped coriander (cilantro)
▢Pilau or Boiled rice
▢Naan bread
Process:
1. Preheat your slow cooker to high.
2. Season the beef with the salt and pepper.
3. Heat 1 ½ tbsp of the oil in a large pan over a high heat.
4. Add the seasoned beef to the pan. Sear until lightly browned (about 6-8 minutes). You may need to do this in two batches.
5. Once seared, add the beef to the slow cooker, using a slotted spoon.
6. Add the remaining ½ tbsp of oil to the pan and turn the heat down to medium.
7. Add in the onion and red pepper and cook for 4-5 minutes, until the onions have softened.
8. Add in the garlic, ginger, curry paste and crumbled stock cube. Stir and cook for 1-2 minutes.
9. Add in the tinned tomatoes, tomato puree, sugar and coconut milk.
10. Stir, bring to the boil, then pour into your slow cooker, stir once more, place your slow cooker lid on and cook for 5-6 hours on high or 7-8 hours on low.
11. If want to thicken the sauce a little, slowly pour in the cornstarch and water mixture whilst stirring - until the sauce is thick enough.
12. Serve over rice, sprinkled with some coriander (cilantro). I like to serve mine with some tomato and onion salad too.

Ingredients for Mutton Kofta Curry:
- Minced Meat (Mutton Keema)- 250 gms (Makes around 12-13 koftas/meatballs)
For Koftas/Meatballs :
- Minced Meat- 250 gms
- Salt- 1/2 tsp
- Pepper Powder- 1/2 tsp
- Onion chopped- 2 tbsp
- Green Chillies chopped- 2
- Garlic, sliced- 3 cloves (1 tsp)
- Coriander Leaves, chopped- 2 tbsp
- Breadcrumbs- 1/2 cup (US cup measure)
- Whisked Egg- 1 small egg
- Red Chilli Flakes- 1 tsp
- Oil- 1 tbsp
For the Gravy:
- Whole Spices:
- Green Cardamom- 3
- Cloves- 3
- Cinnamon- 2
- Bay Leaf- 2
Fried Onion Paste:
- Fried Onions- 2 medium (120 gms onion)
- Curd/Yogurt- 2 tbsp
Spice Powders:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1 tsp
- Coriander Powder- 2 tsp
- Cumin Powder- 1 tsp
- Garam Masala Powder- 1/2 tsp
Other Ingredients:
- Ginger Garlic Paste- 2 tsp
- Cashew Paste- 6 cashews
- Tomato Purée- 4 tbsp
- Salt for seasoning- 1/2 tsp
- Oil- 3 tbsp
- Coriander leaves chopped, for garnish-2 tbsp
Preparation:
- Take a grinder/mixer, add the minced meat and all ingredients for the koftas other than breadcrumbs, whisked egg and red chilli flakes. Now grind everything into a smooth mixture. Remove to a bowl and then add the breadcrumbs, whisked egg and red chilli flakes. Mix well with a spatula and knead with hand.
- Now, grease your palm and take out small portions to form the meatballs/koftas. Roll it in your palms to make smooth & round in shape.
- Arrange them side by side on a plate and keep in freezer for around 30 mins.
- For Fried Onion paste, slice the onions and then fry till golden. Remove and blend into a smooth paste by adding 2 tbsp curd/yogurt.
- Also make cashew paste of 6 cashews. First grind into a powder and then add water to make a smooth paste.
- You can use readymade tomato purée and if not available, also blend 2 small red tomatoes into a purée.
- Chop coriander leaves for garnish and set aside.
Process:
- Take a pan and heat oil for shallow frying the meatballs(koftas).
- Add the meatballs side by side to not crowd the pan and fry them for 6-7 mins on medium heat (reduce to low heat few times) till uniformly brown. Fry in batches.
- For the gravy, heat oil in a wok/kadai and add the whole spices. Once it splutters, add the ginger garlic paste and fry on low heat for 2 mins.
- Now add the brown onion paste, mix and fry on low heat for 2 mins. Add the tomato purée, mix and fry on low heat for another 2 mins.
- Add all spice powders other than Garam masala powder and 1/2 tsp (or to taste) salt, give a mix and cook on low heat for 2-3 mins till oil separates.
- Now add 250 ml water, Garam masala powder, mix and cook on low heat for 2-3 mins till oil separates.
- Add the fried koftas(meatballs), mix and cover & cook on low heat for 10 mins. Remove the lid, add the cashew paste, mix and again cover & cook for 5 mins till oil separates and the meatballs are cooked.
- Garnish with chopped coriander leaves.

2 lbs- Beef ( I cleaned my beef with lime and vinegar)
2 small - Irish Potatoes
2 sprigs-thyme
1 stalk - Scallion
2 small Sweet peppers/ Bell peppers
4 cloves garlic, diced
2 small Onions
2 Carrots
1 whole Scotch Bonnet pepper & 1/2 chopped
small piece of ginger
1 pack- Betapac Curry Powder
1 tablespoon- Meat powered season
2 tablespoons -Maggi All-purpose powered seasoning
1/2 teaspoon-Black pepper
5-6 Pimento berries
Add salt to taste
Cooking oil
3 cups of water
