Satisfying dish that will fit into anyone's diet whether vegan or not. Very simple ingredients and easy method of preparation.
Ingredients: 1 tbsp oil
1 tbsp Jamaican yellow curry (I used Betapac brand)
2 1/2 cups precooked chickpeas (I used canned)
1 tsp cumin
1 tsp garlic powder
1 tsp coriander powder
Seasoned salt or all purpose seasoning to taste
3 garlic cloves, minced
2 tsps minced ginger
1 small white onion, diced
2 - 3 stalks scallion in total
1 small red bell pepper, diced
Ground pepper as desired
About 2 1/2 cups coconut milk
water or broth as needed if you don't have enough coconut milk
Fresh thyme sprigs
Whole scotchbonnet
3/4 cup diced carrot
1/2 cup diced green beans
Frozen corn and green beans (added last minute off camera????)

Curry has been a staple in my life and while I grew up with Jamaican curry dishes, as an adult I've grown to love curries of all backgrounds. This is a combination of a few cultural inspirations that I've thrown together into something my family loves to eat, especially when making it with some homemade naan.
It's fairly easy to make even though it looks like a lot of ingredients and I'm sure you'll love it.

FRENCH BEANS SABJI
Ingredients : 2 tbsp Oil (तेल) 1 tsp Cumin Seeds (जीरा) 1 inch Ginger – chopped (अदरक) 3 fresh Green Chillies – chopped (हरी मिर्च) 3-4 cloves Garlic – chopped (लहसुन) 1 medium Onion – sliced (प्याज़) ½ tsp Asafoetida (हींग) ½ tsp Turmeric Powder (हल्दी पाउडर) 1 tsp Degi Red Chilli Powder (देगी लाल मिर्च पाउडर) 1 tsp Coriander Powder (धनिया पाउडर) 1 cup soaked Chana Dal (भीगी हुई चना दाल) Salt to taste (नमक स्वादानुसार) 2 cups French Beans – cut in 1 inch pieces (फ्रेंच बींस) 1 medium Tomato – chopped (टमाटर) few Coriander Leaves – roughly torn (धनिया पत्ता)
Process: In a kadai heat oil then add cumin seeds, ginger, green chillies, garlic saute a few seconds.
Now add onion saute until translucent then add asafoetida, turmeric powder, degi red chilli powder, coriander powder and saute until fragrant.
Then add soaked chana dal, salt, some water and mix it once then cover and cook for 3-4 minutes.
Now add french beans and mix everything properly then cover and cook for 5-7 minutes.
Remove the lid then add tomatoes and saute for a minute, finish it with chopped coriander leaves and serve hot.
