How To make Curried Bean Sandwich Spread (Mcdougall)
3/4 c Water
1 Onion, finely chopped
1 c Diced celery
1 Green pepper, diced
1/2 c Diced carrot
1 2 Garlic cloves, minced
2 1/2 ts Curry powder
1/2 ts Ground cumin
1 tb Soy sauce
3 c Cooked white beans
Place water in saucepan and add all the vegetables and the garlic. Cook, stirring occasionally, for 15 minutes. Stir in the spices and soy sauce, mix well. Remove from heat. Add beans, mix well. Eating bread not gaining weight!
Happy Veterans Day! Not strick on the Maximum Weight Loss Plan, due to bread - but being faithful to McDougall Starch Solution and Engine 2.
Easy vegan chick pea spread
1 can chick peas/garbanzo beans. Drained and rinsed
1/2 tsp celery salt
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 cup vegan mayo, cashew cream, or avocado
If using avocado must use juice of lime or lemon. So avocado doesn’t turn brown.
Red Lentil Hummus Sandwiches
The red lentil hummus in these sandwiches works as a dip and as a base for pizza tortillas. It's also good right off the spoon. Just saying.
I didn't post the exact recipe from Dreena Burton's new book, Plant-Powered Families. I decided to write out what I used just to keep things straight.
Here's All You Need
(makes 3 cups hummus)
1 cup dry red lentils, washed and drained
2 cups water
1 large garlic clove
1 teaspoon salt
1 teaspoon ground coriander
1/4 teaspoon paprika
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
3 1/2 to 4 tablespoons tahini (I didn't use it. I was out.)
toasted bread, chopped tomatoes, shredded carrot
