1 cn Garbanzo beans (chickpeas)
x Lemon juice x Chopped onion x Chopped tomato x Salsa x Chopped cilantro x Dash cayenne x Salt Do you like garbanzo beans? I take a can of garbonzo beans, smash them up in a bowl with a little lemon juice, chopped onion, chopped tomato, a little salsa, chopped cilantro, and a dash of cayenne pepper and salt, and use it as a spread on bread. let’s prep this delicious CHICKPEA SANDWICH ????????
ingredients:
2 cups cooked chickpeas
½ cup chopped pickles
⅓ cup chopped red onions
2 tbsp fresh or dried dill
2 tbsp fresh lemon juice
1 tbsp dijon mustard
½ cup cashew cream (raw cashew blended with water) or vegan mayonnaise
salt and pepper to taste
⅓ cup chopped celery (optional)
2 minced garlic clove (optional)
instructions:
1- In a large bowl, mix all ingredients well, and adjust the seasoning.
2- Enjoy this in a sandwich (we used whole-wheat bread) with pesto and tomatoes.

FULL RECIPE:
Preparation time: Under 10 minutes
Makes 2 - 3 Sandwiches
Ingredients:
x2 tins of chickpeas (drained)
x2 slices of bread
3 TBSP pesto (recipe here:
2 TBSP vegan mayo
¼ tsp thyme
Salt & Black pepper to taste
A few slices of red onion
Handful of spinach (lettuce/watercress if you prefer)
Directions:
Mash the chickpeas, thyme, black pepper and salt in a bowl.
Add vegan mayo/olive oil if a little dry.
Spread 3 heaped tbsps of the chickpea mix evenly on one slice of bread and layer up with sliced red onion and spinach leaves.
Top off your sandwich with bread, cut in half and serve up.

GRILLED CHEESE CHICKPEA SANDWICH
Prep time: 10 minutes
Cooking time: 5 minutes
Total time: 15 mins
Ingredients:
x2 slices bread
x2 cans chickpeas
X2 slices vegan cheese (Smoked Gouda - Follow Your Heart)
1 tbsp red onion, finely diced
Vegan butter
4 tbsp olive oil
¼-½ tsp turmeric
¼ tsp garlic granules
¼ tsp smoked paprika
1 tsp chicken seasoning
½ tsp black pepper
½ tsp salt
Fresh parsley, handful, finely sliced (save some leaves for garnish)
Directions:
Start by smashing chickpeas, 3 tbsp olive oil and spices in a bowl with a masher. Add parsley and chopped red onion. Add 1 more tbsp olive oil and smash again.
Take 2 slices of bread, one slice of cheese on each piece of bread and 2 large tbsps of chickpea smash. Put together into a sandwich. Spread a thin layer of butter on top.
Get pan wicked hot and add a knob of butter. Place sandwich buttered side up in the pan. Cover with large saucepan lid. Turn over after a couple of minutes when the bottom is golden brown and cover again. Press down with a spatula, remove from pan, slice in half and serve. Garnish with fresh parsley.
