How to make vegan Tuna | EASY CHICKPEA SANDWICH RECIPE
LAY HO MA everyone! Here's a great vegan picnic recipe that's easy to make and delicious. Join me in this episode and learn how to make an amazing vegan tuna sandwich. Let's begin.
Ingredients:
1/2 cup canned chickpeas
salt and pepper
1 tbsp dijon mustard
1 tbsp white sesame seeds
1 tbsp nori
1 tbsp minced onion
1 tbsp lime juice
1 tbsp tahini
4 slices tomato
1 leaf romaine
4 slices of bread for sandwich
Directions:
1. Mash and combine all of the ingredients (minus the tomato, lettuce and bread)
2. Once the chickpea mixture is mashed well, it should resemble a flaky tuna texture
3. Assemble your sandwich and serve

Ingredients:
1 tsp wood pressed groundnut oil, 1 tsp Jeera, 1/2 cup green mung bean sprouts, 1 cup boiled chana, 1/2 tsp turmeric powder, sea salt, 2 splashes water, 1/4 tsp hing.
1 grated carrot, 1 onion, chopped, ginger, lemon, black pepper, cumin powder, salted amla, coriander leaves.

Method: Heat a kadai with oil, add in Jeera, mung bean sprouts, and boiled chickpeas, turmeric powder and little water. Cover and steam cook so that the mung sprouts are lightly cooked.
Add in hing, mix well. Turn off the flame.
Add in grated carrot, onion, green chili, capsicum, ginger, lemon juice, black pepper, cumin powder, salted amla, coriander leaves. Mix well. Lightly mash with a potato masher.
Spread green chutney on the sourdough bread slices. Place filling. Toast the bread on tawa and enjoy!

coriander leaves
1/2 onion
1/4 of capsicum
1 tomato sliced
1 cup cooked channa (chickpeas)
1/4 tsp turmeric powder
1/2 tsp roasted jeera powder (cumin powder)
1/2 tsp dry mango powder (amchur)
8-10 black peppercorns
1/2 lemon
Pink Himalayan salt as needed
3 tbsp thick homeset curd or greek yogurt

FULL RECIPE:
Preparation time: Under 10 minutes
Makes 2 - 3 Sandwiches
Ingredients:
x2 tins of chickpeas (drained)
x2 slices of bread
3 TBSP pesto (recipe here:
2 TBSP vegan mayo
¼ tsp thyme
Salt & Black pepper to taste
A few slices of red onion
Handful of spinach (lettuce/watercress if you prefer)
Directions:
Mash the chickpeas, thyme, black pepper and salt in a bowl.
Add vegan mayo/olive oil if a little dry.
Spread 3 heaped tbsps of the chickpea mix evenly on one slice of bread and layer up with sliced red onion and spinach leaves.
Top off your sandwich with bread, cut in half and serve up.
