How To make Curried Bean Sandwich Spread
3/4 c Water
1 Onion; finely chopped
1 c Diced celery
1 Green bell pepper; diced
1/2 c Diced carrot
2 Cl Garlic; minced
2 1/2 ts Curry powder
1/2 ts Ground cumin
1 tb Soy sauce
3 c Cooked white beans
Recipe by: The New McDougall Cookbook Preparation Time: 0:20 Place the water in a saucepan and add all of the vegetables and the garlic. Cook, stirring occasionally, for 15 minutes. Stir in the curry powder, cumin, and soy sauce, and mix well. Remove from the heat. Add the beans; mix well. Place the mixture in a food processor or blender and process briefly until chopped but not pureed. Chill. 112 calories, 0.5 grams fat per 1/2 cup serving.

Makes 2 sandwiches
INGREDIENTS
2 rolls
1 can chickpeas
2tbsp olive oil
1tsp curry powder
1tsp sweet paprika powder
1tsp gram masala powder
4tbsp hummus
2 handful mix salads
1 tomato, finally sliced
½ onion, finally sliced
Yoghurt (optional)
Salt and pepper according to taste
METHOD
Place a frying pan with olive oil, chickpeas, curry, paprika and gram masala powder over a medium heat. Stir about 3 minutes (add water if needed). Add salt and pepper according to taste. Cut the rolls in lengthwise. Spread the hummus inside the rolls. Add the salad, sliced tomatoes, sliced onion and curry chickpeas. Drizzle yoghurt over your sandwiches.
