A very simple recipe for delicious red currant jam. Only 2 ingredients: fresh berries and sugar.
You can make such a jelly with all berries and fruits that contain a lot of pectin: these are red currants, black currants, white currants, raspberries, gooseberries, apricots, etc. This cooked jam keeps in the refrigerator for a long time, contains a huge amount of vitamins, very tasty and attractive. It can be consumed simply as a dessert or used in baking cakes.

Red Currants - 250 grams (Remove stems)
Water - 250 ml (1 cup)
Sugar - 1 cup (250 gram)

How to make Red Currant Jelly ( Easy Recipe )
In this video I will be showing you an easy way to separate the Red currants from the stalks and we will make a Jelly.

Ingredients:
500gm of Redcurrants after washing
350 - 400 gm of caster sugar
1 tsp of lemon juice ( or 1/2 tsp of citric acid)
100 ml of water
Method:
Mix all the ingredients into a heavy bottom pot and set it on medium heat.
After all the sugar has melted the fruit will start cooking.
Strain the juice from the berries and stalks and cook for about 10 min.
After about 10 min. or so it starts thickening.
Reduce the heat.
Keep stiring to avoid burning and to attain an even consistency.
How to test if its ready for bottling?
Add a few drops to a plate and tilt the plate slightly.
Repeat the process till the it reaches a jelly like consistency. Now its ready for bottling.
Switch off the heat. And set all the sterilised jars on a tea towel.
This will help in preventing the jam jars from cracking while filling the hot jelly.
Fill the jars to the brim and close the lid tightly.

Red currant jelly
Red currants contain the substance pectin, which makes them perfect for jams, juices and jellies.
Red currants are originally a wild berry, native to northern and eastern Europe, but are best known as the cultivated currants found today throughout Europe, North America and part of Asia.
Red currants have been an established part of Scandinavian cuisine since the 17th century. Red currants can be eaten as they are, or as a dessert with sugar, custard, ice cream or milk. They are also delicious as pie or cake fillings, either alone or with other berries.
Currants can be frozen.

For our recipe for red currant jelly, you would need:
1kg red currant
2-3dl water
800-900g of sugar per liter of currant juice
