This Zucchini recipe was a super easy recipe, I tried and never fail.
This recipe can be adjusted according to the wishes of each of you. salt and others can be tested according to individual tastes. the number of Zucchini and onions adjusts to the number of people who will eat and the size of your pie crust.

INGREDIENT A
2 medium-size Zucchini
1/2 Big Onion
Salt
Pepper
INGREDIENT B
1 cup cooking cream
1/2 cup ricotta cheese
1/3 parmesan cheese
1/4 cheddar cheese
4 large eggs
note (let chill zucchini before adding to the sauce)
Bake 180° for 45 minutes

REZEPT UND ZUTATEN:
2 Zucchini.
Salz.
Lassen Sie die Zucchini 10 Minuten ziehen.
1 große Kartoffel.
Überschüssiges Wasser aus Zucchini auspressen.
Das ist ein sehr leckeres und einfaches Rezept!
Überschüssiges Wasser aus den Kartoffeln auspressen.
Grieß 3 Esslöffel.
Milch 50 ml / 1/4 Tasse.
Aufsehen.
Petersilie.
Dill.
Parmesankäse 50-60 gr.
Salz. Schwarzer Pfeffer.
Olivenöl 2 Esslöffel.
2 Eier.
Aufsehen.
Mehl 70 gr. / 1/2 Tasse.
Backpulver 1 Teelöffel.
1 roter Paprika.
Eine Auflaufform mit Olivenöl einfetten.
Im Backofen bei 180°C (350°F) 20 Minuten backen.
Machen wir eine leckere Soße!
Griechischer Joghurt/Sauerrahm 2 EL.
2 Gurken.
3 Oliven.
1 Knoblauch.
Gut mischen.

CRUSTLESS QUICHE RECIPE
(makes 8 slices)
Ingredients:
1/2 cup red bell pepper, finely chopped (75g)
1/2 cup green onions, finely chopped (50g)
1/2 cup sweet potato, grated (75g)
1 cup cheddar cheese, grated, or any other melting cheese (100g)
5 eggs
1 cup cottage cheese (225g)
1/2 cup milk (120ml)
1 tsp mustard
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground nutmeg
1/4 cup ground oats, or oat flour (25g)
NUTRITIONAL INFO (per slice):
158 calories, fat 8.6g, carb 7.9g, protein 12.3g
Preparation:
In a greased pan pan (I use 8-inch or 20cm cast iron skillet) layer down all the veggies and sprinkle with grated cheddar cheese.
In a blender add 5 eggs, cottage cheese, milk, mustard, salt, black pepper, ground nutmeg and ground oats. Blend until really smooth.
Pour the mixture over the veggies and move around with a fork to evenly distrubute the filling.
Bake in a preheated oven at 350F (180C) for 35 minutes.
Let it cool for 20 minutes, then slice into 8 equal pieces.
Serve and enjoy!

???? Spinach and Zucchini Crustless Quiche Ingredients:
Quiche Egg Mixture
6 medium eggs
1/2 cup cottage cheese
1/2 cup mozzarella cheese, grated
1/2 teaspoon salt
1/4 teaspoon black pepper
Quiche Filling
2 cups chopped spinach
1 zucchini, grated
1 small yellow onion
1 teaspoon olive oil
1/4 teaspoon nutmeg
Instructions
1. Preheat your oven to 350º F.
2. Dice your onions.
3. Heat a nonstick skillet on medium-high heat. Add the olive oil. Sautee the onions for 5 minutes. Next, add the zucchini and saute for 2 more minutes or until there is no water in the skillet. Lastly, add the spinach and saute for 3 minutes. Add the nutmeg and stir. Remove from the heat and let it cool for a few minutes.
4. In a large mixing bowl, beat the eggs with salt, black pepper, cottage cheese, and vegetable mixture.
5. Line a 9″ inch baking tin with some parchment paper and add the mixture. Sprinkle the grated mozzarella on top.
6. Bake for 35 to 40 minutes until puffed up and golden brown on top.
7. Let it cool for 5 minutes before cutting. Serve and enjoy!

How To Make Crustless Greek Zucchini Pie | Batzina From Thessalia | Ken Panagopoulos
Here's a very easy and delicious recipe on how to make crustless Greek zucchini pie aka batzina from the region of Thessalia. Try it today, love it forever....
Ingredients:
- 5 cups grated zucchini
- 1 cup Greek yogurt
- 4 eggs
- 1 onion
- 1 tbsp. dried mint
- Small bunch of dill
- 1-1/4 cups all purpose flour
- 3 tbsp. baking powder
- 300g feta cheese
- 1 cup Greek extra virgin olive oil
- Sesame seeds for garnish
- Salt & pepper to taste
Method:
1. Pre-heat oven to 375*f/180*c
2. Grate 5 cups of zucchini, drizzle with salt to remove excess moisture and set aside
3. In a large mixing bowl, combine yogurt, eggs & olive oil and mix well
4. Drain water from zucchini and add to yogurt mixture in bowl
5. Add herbs, flour and baking powder and mix well to combine
6. Crumble feta into zucchini mixture and fold in
7. Grease 9x13 pan with olive oil
8. Pour zucchini mixture into pan and spread evenly
9. Sprinkle with sesame seeds
10. Bake for 45-60 minutes or until top is blistered and toothpick comes out clean
* Allow to sit for about 20 minutes before cutting
