Pie Crust:
240g all purpose flour (chilled)
120g cold butter, cut into cubes
80g cold water
5g salt
Filling:
Zucchini, shredded 200g
Large sized Tomato 5
Mozzarella 120g

1 teaspoon oregano or thyme

12 ounces pasta rotini, fusilli, farfalle, penne, or other
3 cups vegetable broth start with 2 cups or 500 g and add more if necessary
½ cup parmesan cheese grated, or dairy-free cheese
½ cup greek yogurt or dairy-free yogurt
¼ packed cup basil leaves
Garnish with
1 medium lemon the grated zest
2 tablespoons pinenuts

Ingredients:
1 roll of puff pastry (round)
4-5 small zucchini
200 g of ham
200 g of “toma” or “fontina” cheese (or similar kind of cheese)
4 eggs
200 ml of milk
Salt and pepper
Method:
Unwrap the puff pastry and pose it on a round baking tray (keep the baking paper). Put in the fridge for 15 minutes.
Clean the zucchini and remove the extremities. With a potato peeler, cut the zucchini in very thin slices. Cut the cheese in thin slices. Cut the slice of ham in a way that they have the same size of the zucchini.
Take the puff pastry out from the fridge. Lay on it one slice of zucchini, one of ham, and one of cheese. Wrap it. Pose them on the puff pastry as to form a spiral.
Do the same with the other ham/zucchini/cheese.
In a bowl, put the eggs, add salt and black pepper and mix with the milk. Pour it on the puff pastry, between the ‘spiral’.
Cove with a baking paper and cook on a pre-heat over at 180 C for 40 minutes (the baking paper on the top of the pie shall be removed after 25 minutes).
Let the pie to cool down a little bit before serving it (this will help the Quiche to keep its form).
Suggestion: if you like to eat very soft zucchini, put for few seconds the zucchini slices in hot water before using.

the savory zucchini pie it's a very easy and quick recipe!!! it is a recipe that I often make when I have guests at home because I can prepare it in advance and everyone always likes it! try to cook this delicious zucchini quiche following my recipe step by step.... mmmm... mamma mia che buono!!!!
Ingredients:
Puff pastry (possibly round shape)
4 courgettes
1 onion (better if you have shallot)
200 ml of fresh cream
50 g of grated parmesan
2 egg yolk
Olive oil
Salt
Method:
1- Chop the onion in small pieces and the courgettes in little cubes. In a pan, cook them with the oliv oil, for 5 min on high heat while stirring.

3- Move the mixture into a bowl and let it cool down.
4- Then, add the fresh cream, 2 egg yolks, the parmesan, the salt and the pepper. Mix all the ingredients
5- Locate the puff pastry on a baking tray (of about 24/26 cm) and pour the mixture on top of it.
6- Cook it in the oven at 180 C for 30/40 min and then another 5/10 min with heat only from below
