Recipe for Crustless Quiche/Egg Bake/Mini Soufflé
Makes 1 3 ramekin
1 Egg
1/3 Cup Half & Half (you can use milk or cream)
1/4 Cup Shredded cheese
1/4 Cup Mix-ins (I used sauteed zucchini and onions)
Dash of salt (optional)
Dash of hot sauce (optional)
Grease ramekin with vegetable spray
Mix all of the above together as per the video
Preheat Thermowell for 5 minutes
Place on Thermobaker and cook with the gas on for 12 minutes
Turn gas off and cook on retained heat for 30 minutes

How to Make ANY Quiche! (No Recipe Required)
Today we’re going to make quiche. There are many different types of quiche, the most famous being Quiche Lorraine, but by the end of this video you won’t be limited to just one flavor combination… think chard/white bean/parm, chicken/pesto/thyme, or even something like kimchi/kalbi! The opps are endless, people.
There’s a time and place for an exact recipe, but like the great... I'm spacing on the dude's name... said, to know one recipe means that you know one recipe, but if you know 1 technique you know 1,000 recipes... or something fairly similar to that. We’ll start with the French shortbread pastry crust, otherwise known as pâte brisée (“pat-bree-zee,”) then move onto the formula for the egg base and from there the world is yours. Good kitchen scale -
Deep Tart Pan -
ALL-PURPOSE PIE DOUGH (pâte brisée):
250g (about 2 cups) Bread Flour
205g (18 tbsp, about 2 1/ 5 sticks) Unsalted Butter
3g (1/ 3) tsp Kosher Salt
70-85g (1/ 4 cup) Ice Water *amount depends on humidity of environment
EGG BASE:
600g (about 11-12 medium) Whole Eggs
260g (about 1 cup) Whole Milk
260g (about 1 cup) Heavy Cream
15g (about 2.5 tsp) Salt
QUICHE LORRAINE FILLING:
700g (about 3 cups) Egg Base - see above.
100g (about 1 medium) Onion, sliced thin
100g (about 2 medium) Leeks, sliced thin
150g (1.5-2 cups) Gruyere or Swiss cheese
150-200g (5-6 thick slices) Bacon
2g (1-3 sprigs) Fresh Thyme
1g Nutmeg, (a couple passes on the microplane)

Stir and bake crustless pie! Squash / courgette / zucchini quiche!
Easy peasy stir and bake skoosh (squash/courgette/zucchini) crustless pie / quiche / tart! Here's the recipe for Lottes nemme squshtærte which I got from my lovely friend, Sue! Do you use the Flylady system - we menuplan once a week. This is a great recipe to use up what you have in your fridge!
Mix everything together and cook in a tart tin (circa 10/11 inches, 24-26 cms) for approximately 45 minutes at 175c/350f.
700g of squash/zucchini/courgette (or any mix of veggies – use what you have in the fridge/pantry!)
200g of leftover chopped ham/chicken, etc
200g of grated cheese (I used mozzarella)
30g (about 4 or 5 tablespoons) porridge oats/rolled oats
95g flour (about 9 or 10 tablespoons)
1 teaspoon of baking powder
¼ decilitre of oil (about 2 tablespoons) – not essential
3 eggs
1 decilitre/100mls of milk (about half a cup)

Mr. Krause shares his Crustless Quiche recipe
Crustless Quiche: Prep 20 minutes; Cook 40 minutes; Servings 6-8; Calories 260/servingIngredients:
1 tbsp. olive oil
2 cloves minced garlic or garlic powder
1 medium onion, chopped
12 ounces of spinach (steamable in microwave is fine)
5 eggs beaten
3 cups shredded cheese
1 tbsp. parsley
1 pinch of nutmeg (optional)
1 dash of salt
1 pinch of pepper
Directions:
Spray a 10-inch pie plate with non-stick spray and set aside
Preheat oven to 350 degrees
Over medium-high heat, heat olive oil in a large skillet
Add garlic and onions, cook for about five minutes to soften onions
Cook spinach in microwave as directed, and add to onion/garlic mixture to finish cooking out any water
In a large bowl, combine eggs, cheese, herbs and spices
Remove spinach mixture to cheese mixture and stir
Pour combined mixture into pie plate
Bake in oven for approximately 30-40 minutes until mixture has set with a slight golden brown crust on top.
Air Fryer Crustless Quiche
Make this air fryer crustless quiche for your next breakfast, lunch, or even dinner! Made using feta, cheddar cheese, and spinach, this is a nutritious and even low-carb meal that you will enjoy. And while I used the Ninja Foodi, you can also use other air fryers to make this recipe.

Ingredients
1 tablespoon butter or margarine for greasing the dish
1 tablespoon olive oil (or preferred choice of cooking oil)
½ small onion finely diced or finely sliced
2 cloves garlic minced
2 cups fresh spinach trimmed and properly washed
5 large eggs
⅔ cups Creme fraiche, milk, or heavy cream
¼ teaspoon salt (use more or less, to taste)
a pinch of nutmeg (optional)
a pinch of black pepper (use more or less, to taste)
85 grams Feta cheese (crumbled - approximately 3 oz)
8-10 cherry tomatoes halved
1 cup sharp cheddar cheese
Air fry at 350°F (or 180°C) for 30-50 minutes, OR until the top turns golden brown and a skewer or toothpick inserted in the middle comes out mostly clean, with just a little bit of custard sticking to it.

This method was tested and perfected using a Ninja Foodi multi-cooker air fryer. Every air fryer behaves differently, even two of the same model. For this reason, keep an eye on the air fryer quiche when air frying, and adjust the cooking time or the temperature that you need based on your specific air fryer! Factors such as the depth of the baking tin/dish you are using, the altitude you are in as well as the age of your air fryer may also affect the results.
