How To make Crustless Eggplant Quiche
1 eggplant
peeled and diced
17 ounces tomatoes (mashed slightly) :
drained
1/2 cup or less tomato juice (from tomatoes)
1 onion chopped fine
mushrooms (if desired) :
sliced 4 eggs slightly beaten
4 ounces cheddar cheese (optional) :
grated
2 tablespoons parmesan cheese (optional)
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon oregano
1/4 teaspoon basil
1/2 teaspoon garlic powder
dash cayenne pepper pinch marjoram
Soak eggplant in salt water for 30 minutes. This step is optional. Rinse and drain. Saute onions, mushrooms, in tomato juice until tender. Add eggplant, spices, and slightly mashed tomatoes and simmer until eggplant is tender and most of the liquid has evaporated. Remove from stove, stir lightly beaten eggs and cheddar cheese into eggplant mixture. Pour into 9" quiche pan which has been sprayed with a pan-coating. Bake at 375 degrees for 25-35 minutes or until knife inserted comes out clean. Let set 5-10 minutes before serving. Sprinkle parmesan cheese over top before baking if desired.

For this recipe, you will need a 28 cm loose-bottom tart tin and some baking rice or beans.
For the Pastry
250 gr Flour
150 gr Cold Unsalted Butter
1/2 tsp Salt
3 tbsp Cold Water
Bake for 15 mins with baking rice
Bake for 10 mins more without baking rice
For the Filling,
Leek
Asparagus
Broccoli
Zucchini
4 Eggs
250 ml Heavy Cream
Grated Mozzarella
Salt and Black Pepper
Bake for 30 mins at 170C

Vegetable quiche
20X30cm (8/12 inch) size pan or 22cm (8.5) diameter pan.
Ingredients:
2 carrots
1 potato
A glass of broccoli
1 onion
2 green onions
4 eggs (L size)
2 tablespoons olive oil
120g (1/2 cup) sour cream
50g (2/3 cup) mozzarella cheese
Salt and black pepper (about 1/2 teaspoon salt and 1/2 teaspoon black pepper)
140g (1 cup) all purpose flour
10g (2 teaspoons) baking powder
preparation method:
1. Rinse the vegetables well and cut into small cubes.
2. In a large bowl, place eggs, olive oil, cheese, salt and pepper and mix well.
3. Add flour and baking powder and mix until all the flour is assimilated into the mixture.
4. Add all the vegetables and mix gently.
5. Transfer to a pan, and bake in a pre-heated oven at 355f (180c) degrees for 40-50 minutes. The pie is ready when golden and stable.
6. Allow the quiche to cool completely, and only then cut.
Note:
You can replace the vegetables with other vegetables that you like or prefer.
