Homemade Crostini
You can make homemade crostini, they are so easy to make and you can save a lot of money by making these instead of buying these at the store. You can use crostini to make all sorts of appetizers. You can put a little cheese on top, a piece of fresh tomato drizzled with olive oil and balsamic vinegar.
So we're going to go ahead and start making our Crostini. Now I bought a
couple of loaves of day old bread, since we're just going to be toasting
this. You know what? If day old bread is available, go ahead and purchase
it. It's really not going to make any difference on the flavor of this. So
what we need to do is we need to go ahead and cut this into 3/8 to about
1/4 inch slices of bread.
Then we are going to rub a little olive oil or butter, whichever you
prefer, on top of these, and we're going to just brown these on both sides.
So why don't I go ahead and show you how we get these cut up. For one
thing, you don't have to worry if your pieces aren't all perfect. That's
really not going to matter too much. So go ahead and cut them as evenly as
you can.
So now go ahead and spread those Crostini onto a baking sheet. Be sure to
turn your oven on broil. I use the setting high on my oven. And you know
what? These are going to take just moments to do. Drizzle on your olive
oil. Go ahead and brush these out with a little pastry brush, and you are
going to have perfectly toasted Crostini.
Now what can you do with Crostini? You can put just about anything on it.
You can put a little bit of cheese, some fresh tomatoes, drizzle it with a
little balsamic vinegar. You're going to have a fabulous appetizer. These
go into the oven, and then we are going to let them brown on one side. Flip
them over and if they need a little bit more oil, go ahead and drizzle that
on, pop them back through the oven. When you take them out, let them cool
completely before stirring them. And there you go, the Crostini are ready

Tomato Crostini with Whipped Feta

Yield: 6 to 8 servings
Ingredients
6 ounces good feta, crumbled
2 ounces cream cheese, at room temperature
2/3 cup good olive oil, divided
2 tablespoons freshly squeezed lemon juice
Kosher salt and freshly ground black pepper

2 tablespoons minced shallots (2 shallots)
2 teaspoons minced garlic (2 cloves)
2 tablespoons good red wine vinegar
2 pounds ripe heirloom or cherry tomatoes, 1/2-inch-diced
3 tablespoons julienned fresh basil leaves, plus extra for serving
20 to 25 (1/2-inch-thick) diagonal baguette slices, toasted
2 tablespoons toasted pine nuts
Directions
For the whipped feta, place the feta and cream cheese in the bowl of a food processor fitted with the steel blade. Pulse until the cheeses are mixed. Add 1/3 cup of the olive oil, the lemon juice, 1/2 teaspoon salt, and 1/4 teaspoon pepper and process until smooth.
For the tomatoes, up to an hour before you're serving, combine the shallots, garlic, and vinegar in a medium bowl. Set aside for 5 minutes. Whisk in the remaining 1/3 cup olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper. Add the tomatoes, stir gently, and set aside for 10 minutes. Stir in the basil and taste for seasonings.
To assemble the crostini, spread each slice of bread with a generous amount of whipped feta. With a slotted spoon, place the tomatoes on top. Put the crostini on plates and scatter with the pine nuts. Sprinkle with extra basil and serve.

Crispy Garlic Crostini~Crostini Recipe~Simple Appetizer Ideas~Kitchen Basics~Noreen's Kitchen
Today I want to share a kitchen basic that is quick and delicious and can be made from pantry staples. Crostini sounds fancy but it really is nothing more than toast. It is baked until crisp and seasoned with garlic and brushed with olive oil. It is usually served with a dip such as a fresh tomato bruschetta or white bean spread. It is also a great accompaniment to a hot artichoke or spinach dip. Or, like Rick mentioned, this would be great just as an accompaniment to spaghetti in place of garlic bread.
I started with a loaf of French baguette, but you could use any sort of Italian hoagie roll or sub roll and cut it just the same way. Sliced on the bias this makes for a very pleasing slice with eye appeal and it makes it easy to dip with whatever the Crostini is being served. I am planning to serve mine with a fresh tomato bruschetta that I will be sharing in an upcoming video soon.
The slices are arranged on a baking sheet that I lined with parchment and placed in a 350 degree oven for 15 minutes, you will want to remove halfway and flip the slices for even cooking and browning. Once done the Crostini are removed from the oven and traditionally, each slice would be rubbed with a fresh garlic clove to infuse the flavor, then drizzled with olive oil. I did not have any fresh garlic on this day so I simply added some chopped, prepared garlic to some extra virgin olive oil and allowed it to sit while the bread was in the oven. Then I brushed each slice with the garlic oil while it was still hot.
These toasts are delicious on their own but best when served with a dip or a topping. Olive tapenade would also be a lovely accompaniment or just about any dip you like!
