Crispy Baked Chicken Tenders
Here I'll show you the secrets to getting extra crispy chicken tenders in the oven. Easy to make and bursting with flavour, these breaded chicken tenders are the ultimate finger food! Makes approx 16 tenders (depending on size) so serving is approx 4 people. Chris x

Crispy Baked Chicken Tenders | Serves 4
????INGREDIENTS????
1.3lb / 600g Chicken Tenders OR Chicken Breast, sliced into strips & at room temp (see notes)
1/3 cup / 70g Flour
1 1/4 cups / 75g Panko Breadcrumbs (see notes)
1 heaped tbsp Butter
1oz / 30g freshly grated Parmesan (see notes)
1 Egg, beaten
2 tbsp Milk
1 tsp Paprika
1 tsp Salt
1/4 tsp each: Onion Powder, Garlic Powder, Black Pepper
1/8 tsp Cayenne Pepper, or to taste
Oil Spray
????METHOD????
Melt 1 heaped tbsp butter into a frying pan over medium heat and stir in 1.25cups/75g Panko breadcrumbs. Continue frying for 5 or so mins until the breadcrumbs turn light golden. Remove from heat.
Pre heat oven to 200c/390f.
In a small bowl combine 1 tsp paprika and salt, 1/4 tsp onion powder, garlic powder, black pepper, and 1/8 tsp cayenne pepper (or to taste).
Line up 3 large bowls. In the first bowl combine 1/3cup/70g flour with 1 tsp of your spice mix. In the second combine 1 beaten egg with 2 tbsp milk. In the third combine breadcrumbs with 1oz/30g parmesan and the rest of your spice mix.
One by one dip your tenders first into the flour, then into the egg and finally into the breadcrumbs, ensuring you fully coat at each stage (especially the last).
Place on a baking tray (preferably elevated on a wire rack if you have one), spray with oil then pop in the oven for 20mins or until golden, crispy and piping hot through the centre. If at all you notice them starting to char at all, turn down the heat.
Place on a cooling rack for a few mins to allow all the steam to escape and crisp up. Serve with your favourite dip!

Crispy Breaded Chicken in the Oven
RECIPE: Hi Guys, today I’ll show you How to Make Crispy Breaded Chicken in the Oven. There’s no messy frying with this easy recipe. This chicken is perfect for weeknights because it’s very quick to make. LINK to Meat Pounder: I had a lot of toasted bread left over from a review I did for my other channel - bestkitchenreviews so I thought I would make bread crumbs. You can definitely use store bought breadcrumbs. I’m processing the toasted bread in a food processor to get coarse crumbs. I’ll heat up a pan and add the bread. Stir for a few minutes, add a little oil and stir until the bread is dry. Let this cool and then put it back in the food processor. Add dried rosemary, oregano, basil, parsley, garlic powder, salt and ground black pepper. Process until fine like this. These breadcrumbs smell so good. If you’re using store bought breadcrumbs, put them in a pan with a little oil for a few minutes just to get some color on them. For the chicken, I’m using 4 boneless skinless chicken thighs. Put plastic wrap on a cutting board, the chicken on top and another piece of plastic on top. Pound the chicken until flat and even. Don’t worry too much about the exact thickness. It should look about double the size you started with. Throw the plastic wrap away and you have very little to clean. By the way, this is a really useful heavy steel meat pounder. I’ll put a link below the video if you want to get it. To dip the chicken, I’ll grate garlic cloves into a bowl. Add mayonnaise, ground black pepper and mix. If you love garlic, you can even use this as a dip on its own. All 4 pieces are pounded. Slather them on both sides with the garlic mayonnaise. I start with a spoon and end up mixing with my hands. Make sure to cover the chicken all over with mayo because that’s what will help the breadcrumbs stick. You’ll need a sheet pan with a rack on top. Oil the rack or use a non-stick spray. Put the breadcrumbs on a large plate to avoid a mess on your counter. I’ll dip the chicken in the breadcrumbs and place on the rack. Really press in the crumbs on both sides. I’ve done 3 pieces and will add a little more breadcrumbs for the last piece. Don’t add all the breadcrumbs in the beginning because you’ll end up wasting some. I don’t want to waste any especially when I spend time to make it from scratch. Heat your oven to 425 degrees Fahrenheit or 220 degrees Celsius. Place the chicken in the middle rack of your oven. Set the timer to 20 minutes. I ended up cooking the chicken for 25 minutes but it depends on your oven. Since the pieces are thin, the meat will cook in 20 minutes. A few minutes extra will give you a crispier crust. To avoid cleanup, place foil or parchment on the sheet pan because crumbs and juices will drip onto the pan. Nice and crispy. The meat is juicy and very flavorful. I didn’t add any salt to the mayo because the mayo is salty enough. You can add some salt if you wish. The meat is soft enough that you can cut it with a fork. This piece came off by itself because it’s so tender. I served this with potatoes and sauteed vegetables. This is perfect for a quick dinner and I hope you give it a try. Crispy Baked Chicken Parmesan
This baked chicken Parmesan is healthier than the deep fried version, but equally crispy and delicious! No need to stand over the stove frying batches, just throw all of your chicken on a baking sheet and bake.

Ingredients
4 (8 ounce) boneless, skinless chicken breasts
1 teaspoon salt, divided
1/4 cup all-purpose flour
1 large egg
3/4 cup plain breadcrumbs (panko also works)
1/4 cup fresh Parmesan cheese, grated
1/2 teaspoon garlic powder
1 teaspoon dried oregano
1 to 1 & 1/2 cups marinara sauce
1 cup mozzarella, shredded
Instructions:
Preheat your oven to 425°F. Line a large baking dish with parchment paper. Set aside.
Prep your chicken: Slice your chicken breasts in half horizontally to get 2 thin steaks from each breast. Cover the chicken with a piece of plastic wrap to prevent splattering. Using the smooth side of a meat pounder or a rolling pin, gently pound out any thick parts of the chicken to get an even thickness all around.
Salt your chicken pieces on both sides and set aside.
Set up your breading station: In a wide plate, add your flour along with 1/2 a teaspoon of salt. Mix to incorporate and set aside.
In a small baking dish or plate with high sides, add your egg and beat to break it up. Set aside.
In a separate small baking dish or plate with high sides, combine your bread crumbs, Parmesan, garlic powder, and oregano. Mix to combine.
Bread the chicken: Take one of your chicken cutlets and dip in the flour mixture to coat both sides. Transfer to the dish with your beaten egg and turn to coat both sides in the egg. Move the chicken over to the bread crumb mixture and turn to coat both sides. Transfer the breaded chicken to your prepared baking sheet. Repeat with the remaining chicken.
Bake your chicken in your preheated 425°F oven for 10 to 15 minutes, or until golden brown, crispy, and cooked through. Halfway through the cooking, turn your chicken over to help both sides crisp up.
Top your chicken with your marinara sauce and grated mozzarella.
Return to your oven and broil on low for 3 to 5 minutes, or until the cheese is melted.

• 1 tablespoon aluminum-free baking powder
• ½ teaspoon salt

Buffalo Sauce:
• ¼ cup buffalo hot sauce
• ¼ cup melted butter
• 1 tablespoon honey
✅Instructions
Basic Crispy Baked Chicken Wings:
1️⃣ Place a wire rack onto a baking sheet. Use paper towels to pat chicken wings as dry as possible and place into a large mixing bowl.
2️⃣ In a small bowl, stir together baking powder, salt, pepper, and paprika (and any additional flavor additions you'd like to use). Sprinkle over chicken wings and toss until wings are evenly coated.
3️⃣ Place wings in a single layer on the prepared baking sheet. Refrigerate uncovered overnight, 12 to 24 hours.
4️⃣ Preheat oven to 425 degrees F. Take wings directly from refrigerator and roast in the preheated oven for 30 minutes, until crispy and brown and the internal temperature reaches 165 degrees F. Cooking time will vary based on the size of your chicken wings.
5️⃣ Serve plain hot, or use desired flavor sauces and variations.
Buffalo Sauce:
1️⃣ In a small bowl, whisk together hot sauce, melted butter, and honey.
2️⃣ Add cooked chicken wings to a large mixing bowl. Pour in sauce and toss to coat.

• 2 tablespoons extra virgin olive oil
• 1 tablespoon lemon pepper
In a small bowl, whisk together olive oil and lemon pepper.
Add prepared and cooked chicken wings to a large mixing bowl. Pour in sauce and toss to coat.
♨️ Simple BBQ Sauce ♨️
• ¼ cup brown sugar
• 2 teaspoons cornstarch
• 1 teaspoon salt
• 2 1/2 teaspoons cajun seasoning
• 1 teaspoon smoked paprika
• 1 cup tomato sauce
• 1/4 cup molasses
• 2 tablespoons Worcestershire sauce
• 1 tablespoon hot sauce
• 3 minced garlic cloves
In a medium sauce pan, whisk together brown sugar, cornstarch, salt, cajun seasoning, and paprika.
Whisk in tomato sauce, molasses, worcestershire sauce, hot sauce, and garlic.
Bring to a simmer over medium high heat, stirring occasionally. Let simmer 15 minutes.
Add prepared and cooked chicken wings to a large mixing bowl. Pour in sauce and toss to coat.

• 1 teaspoon olive oil
• 5 cloves minced garlic
• 1/3 cup honey
• 1/4 cup water
• 2 tablespoons apple cider vinegar
• 1 tablespoon soy sauce
Heat olive oil in a small saucepan over medium-high heat. Add in garlic and saute 90 seconds.
Add in honey, water, vinegar, and soy sauce. Bring to a simmer, then remove from heat.
Add prepared and cooked chicken wings to a large mixing bowl. Pour in sauce and toss to coat.
???? Garlic Parmesan Sauce ????
• 1/4 cup melted butter
• 1/3 cup grated Parmesan cheese
• 1/2 teaspoon garlic powder
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
In a small mixing bowl, whisk together melted butter, parmesan cheese, garlic powder, salt, and pepper until well combined.
Add prepared and cooked chicken wings to a large mixing bowl. Pour in sauce and toss to coat.

• 1/3 cup brown sugar
• 2 tablespoons cornstarch
• 1/2 teaspoon ground ginger
• 1 cup water
• 1/4 cup soy sauce
• 1 tablespoon honey
• 1 clove minced garlic
In a medium sauce pan, whisk together brown sugar, cornstarch, and ginger.
Stir in water, soy sauce, honey, and garlic. Bring to a simmer over medium high heat.
Let simmer until thickened, about 2 minutes. Remove from heat.
Add prepared and cooked chicken wings to a large mixing bowl. Pour in sauce and toss to coat.

• 2 cups distilled white vinegar
• 1 cup water
• 3 tablespoons salt
• 1/2 teaspoon black pepper
In a large mixing bowl, stir together vinegar, water, salt, and pepper until dissolved. Add in raw chicken wings and make sure they are completely submerged.
Let soak in the refrigerator for 2 hours.
Pat completely dry, then proceed with basic crispy baked chicken wing recipe.
