How To make Crispy Oven Fried Parmesan Chicken
4 chicken breast halves (6 ounces each)
with skin
and bone 4 teaspoons margarine
1 clove garlic
1 1/2 ounces corn flakes
1 tablespoon grated Parmesan cheese
1/8 teaspoon ground red pepper
1/4 teaspoon freshly ground black pepper :
my addition
1. Remove the skin and all visible fat from the chicken. (I used boneless skinless chicken breast halves.GS) Preheat the oven to 400 oF. 2. In a small nonstick skillet over medium heat, warm the margarine and garlic; cook until the margarine is melted and the garlic is fragrant. (I was out of garlic cloves -sob, sob- so I used a good sprinkling of garlic powder. GS) 3. In a heavy-duty plastic bag, with a rolling pin, crush the corn flakes to form fine crumbs. In a medium-sized shallow bowl, combine the corn flake crumbs, Parmesan and peppers. 4. Brush the tops of the chicken breast halves with the garlic-margarine mixture. Sprinkle the corn flake crumbs evenly on the chicken and gently press the mixture into the chicken to make sure it sticks. 5. Place the chicken bone-side down on a nonstick baking pan and bake for 35 to 40 minutes or until the coating is golden brown and the chicken is cooked through.
Cooking Tips: Do-Ahead Steps: The coating mixture (step 3) can be combined in advance.
Serving size: 1 chicken breast half.
Each serving provides: 1 fat, 3 proteins, 1/2 bread, 10 optional calories.
Nutrition Information: 224 calories, 28 g protein, 7 g fat, 10 g carbohydrate, 73 mg cholesterol, 263 mg sodium.
Team the chicken with a salad of curly endive and cherry tomatoes. Set out a fresh fruit platter for dessert: Try pineapple chunks, strawberries and slices of mango or peach.

Honey Chipotle Sauce:
1/2 can Chipotles in adobo
1/4-1/2 cup honey
2 tbsps lime juice
2 tbsps soy sauce
1 tbsp worcestershire sauce
2 tbsps brown sugar
2 tbsps butter
1 tbsp garlic
2 tbsps apple cider vinegar
salt, pepper, smoked paprika
Directions:
Preheat oven to 425. Wash and DRY wings. Season with your favorite wing seasoning and then toss in 2 tbsps corn starch. Place wings on a wire rack and place in the oven on the middle rack. Make your sauce by warming the ingredients and then blending until smooth. Adjust based on your spice tolerance. Flip the wings every 15 minutes or so to ensure they're cooking evenly. During the last 5-10 mins you can increase the heat to 450-500 to get them extra crispy if desired. (If you like your wings Fried Hard when you order them) Toss in the sauce and garnish with lime zest.

Ingredients:
6 chicken thighs
2 cups all-purpose flour
2 pinches cayenne pepper, divided, or to taste
2 pinches garlic powder, divided, or to taste
salt and ground black pepper to taste
3 large eggs
2 cups panko bread crumbs
Directions:
Preheat the oven to 400 degrees F (200 degrees C). Line a baking pan with parchment paper.
Combine flour, 1 pinch cayenne, 1 pinch garlic powder, salt, and pepper in a shallow bowl.
Whisk eggs in a second bowl.
Combine panko bread crumbs with 1 pinch cayenne, 1 pinch garlic powder, salt, and pepper in another shallow bowl.
Dip chicken thighs into the flour mixture, followed by beaten eggs, and then into the panko mixture. Transfer to the prepared pan.
Bake in the preheated oven until coating is golden and chicken thighs are no longer pink in the centers, about 40 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

How to get the BEST Crispy Chicken Wings! | Oven Baked Chicken Wings Recipe
The crispiest chicken wings baked in the oven. The skin is deliciously crisp and salty, with tender meat on the inside. No deep frying required!
Smother in sauce (yes, they still stay crisp even with the sauce on) to make bbq wings, buffalo wings or sticky Asian-inspired wings. Or eat as they are - they're totally moreish without any sauce!

Crispy Chicken Wings Ingredients:
2.2 lbs (1 kg) chicken wings
2 level tbsp aluminium-free baking powder (It has to be baking powder NOT baking soda - see further notes on baking powder below
½ tsp salt make sure it's regular table salt
½ tsp pepper
Instructions
1. Preheat the oven to 120C/250F and place a rack on a large baking tray.
2. Cut each wing at the joint so you have a mini wing and a drumette.
3. Dry the wings with paper towels, then place in a large bowl and add the baking powder, salt and pepper. Toss to combine. Note - it's important to dry the wings first so they only get a light coating.
4. Place in a single layer on the rack, skin side up. It's fine for them to be touching. Discard any remaining coating once tossed together.
5. Place on the lower shelf of the oven for 30 minutes.
6. After 30 minutes, turn the oven up to 220C/425F and rotate the tray for even cooking. Cook for a further 45-50 minutes until the wings are lightly golden and crispy.
7. Take out of the oven to cool slightly before serving.
