How To make Creamy Spam Broccoli Casserole
Vegetable cooking spray 1 pk Elbow macaroni (7 oz)
2 c Frozen cut broccoli, thawed
-and drained 1 cn SPAM Luncheon Meat, cubed
-(12 oz) 1/2 c Chopped red bell pepper
2 c Skim milk
2 tb Cornstarch
1/4 t Pepper
1 c Shredded fat-free Cheddar
-cheese 3/4 c Soft bread crumbs
2 t Margarine, melted
Heat oven to 350'F. Spray 2-casserole with vegetable cooking spray. Cook macaroni according to package directions; drain. In casserole, combine macaroni, broccoli, SPAM, and red pepper. In small saucepan, stir together milk, cornstarch, and pepper until cornstarch is dissolved. Bring to a boil, stirring constantly, until thickened. Reduce heat to low. Add cheese; stir until melted. Stir sauce into SPAM mixture. combine bread crumbs and margarine; sprinkle on top of casserole. Bake 40 minutes or until thoroughly heated.

Tender and delicious, creamy broccoli recipe makes this Broccoli Casserole the BEST EVER! This side dish always a hit at dinners or holiday gatherings. The best part is the buttery cracker topping.

Ingredients
2 packages frozen chopped broccoli, thawed 16 oz each
¾ c. mayonnaise
1 c. grated sharp cheddar cheese
10.75 oz can condensed cream of mushroom soup
2 eggs beaten
2 c. crushed Ritz crackers
2 Tbs butter melted
Instructions
Preheat oven to 350 degrees F.
Spray a 9 x 13 inch baking dish with non-stick spray. Set aside.
In a large mixing bowl combine broccoli, mayonnaise, cheese, soup and eggs. Stir until combined. Place the mixture in prepared baking dish.
In a small bowl combine the crackers and butter. Spread evenly over the broccoli mixture.
Place casserole dish in the preheated oven for 30 minutes or until set and top is golden brown.
HOW TO THAW FROZEN BROCCOLI
The easiest way to thaw it is in the refrigerator overnight. As it thaws, the liquid will collect in the bottom of the bowl (or in the bag) and you’ll want to drain that off before you add it to your casserole.
If you’re like me and forget to toss it in the fridge, you can thaw it in a bowl of water on the counter but it will need a little time to completely thaw out. Then just drain it and you can make the recipe

1 cup half and half
1 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
3 cups chopped broccoli florets
6 ounces extra-sharp cheddar cheese, grated
DIRECTIONS:
1. In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
2. Melt butter in a large skillet over medium high heat. Add garlic and shallot, and cook, stirring frequently, until fragrant, about 2 minutes.
3. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in milk, half and half and Dijon until slightly thickened, about 3-4 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste.
4. Stir in pasta, broccoli and cheese until well combined, about 3-4 minutes.
5. Serve immediately.
