Coffee Cream Pie

Ingredients
1/3 Cup plus one tablespoon flour
1/8 teaspoon salt
2/3 Cups sugar
1 Cup strong coffee
1 tsp vanilla
2 egg yolks
2 tablespoons butter
1 Cup milk
1 baked pie shell
Instructions
Mix flour, salt, sugar and then add coffee, milk and cook until thick. Stir in beaten egg yolks and cook until thick stirring constantly. Remove from heat and add butter and vanilla. Stir until blended. Pour into pie shell and top with cool whip after set.

Easy Cold Brew Coffee Pie

This frozen, no-bake Cold Brew Coffee Pie is PHENOMENAL. Creamy, smooth and packed with coffee flavor, it’s perfect for a hot day and for any coffee fanatic!
Ingredients
1 (3.4 oz) box INSTANT vanilla pudding mix
3/4 cup cold brew coffee (any brand is fine, but please make sure it’s sweetened. I used Starbucks)
1/2 cup milk or cream
1 Tbsp pure coffee extract (or less if you want a less strong coffee flavor)
1 (8 oz) tub Cool Whip, thawed
1 prepared Oreo cookie crust
Whipped cream, for garnish
Dark chocolate-covered espresso beans, for garnish
Instructions
In a large bowl, whisk together the instant pudding dry mix, the cold brew coffee, the milk and the coffee extract. Whisk until combined and slightly thickened, about 1 minute. Fold in the Cool Whip completely, making sure to get the bottom!
Pour the mixture into the prepared pie crust and smooth out the top. Freeze for at least 6 hours, or overnight.
Just before serving, pipe on whipped cream and garnish with dark chocolate-covered espresso beans. Cut into wedges and serve

Carnivore Coffee Pie
Carnivore Coffee Pie is a new bold twist on a classic, much adored beverage. Picture a rich coffee-infused filling nestled upon a decadent carnivore crumbles crust. It's a delightful treat that combines the robust flavor of coffee with the indulgence of a pie. If you decide to give it a try, savor every coffee-infused bite.

9 spring form pan
Parchment paper
Ingredients
9g/4.5tsps beef gelatin powder
60g/2oz water
238g/1C heavy whipping cream
738g/26oz ricotta cheese
232g/1C mascarpone
8g/2tsp vanilla extract
1.5g/.25tsp salt
9g/8.5tsp freeze dried coffee, dry mix, unprepared
300g/2C carnivore crumbles
13g/1T butter/ghee (I love to use my vanilla infused ghee personally.)
Directions for crust
Preheat oven to 325°/163°
Line spring form pan with parchment paper.
Pour crumbles in pan.
Put butter/ghee in pan.
Heat until butter/ghee is melted, a few minutes.
Stir and mix crumbles to evenly distribute butter/ghee. Smooth and press lightly to flatten.
Put in fridge while mixing pie filling to set.
Directions for filling
Fill a small bowl with hot water to bloom the gelatin. Sprinkle gelatin over and let sit until gelatin absorbs water, 5 to 10 minutes.
Meanwhile, beat cream on medium high speed until stiff peaks form.
In a large bowl, stir ricotta, mascarpone, coffee, vanilla extract and salt until light and fluffy about a minute or two.
Add gelatin and stir until combined.
Gently fold in whipped cream.
Pour filling into crust.
Refrigerate pie until gelatin sets, at least 2 hours. I try to wait until overnight.

Chocolate Coffee Pie
Dessert is everyone’s favorite way to top off a good meal, and we’ve got one for you that is sure to be a favorite. Something sweet is on the menu as we grab a Bite with Belkys.
Ingredients:
1 1/2 cups semi sweet chocolate chips
1 tsp. vanilla
3 cups heavy cream
1 tsp. instant espresso powder
1 tbs. sugar
ready made graham cracker crust
pinch salt
cocoa powder for garnish
Method of Preparation:
Add the chocolate chips to a medium-sized bowl. Heat one cup of heavy cream on high in the microwave for about a minute. Carefully take it out of the microwave and add it to the chocolate chips and whisk until the chips melt. Add in the vanilla, espresso powder and salt and whisk until combined.
Add the remaining 2 cups of heavy cream and sugar to a large bowl and use a hand mixer to make whipped cream. Whip until stiff peaks form. Fold half of the whipped cream into the chocolate mix and blend well.
When it’s combined, add it to the graham cracker crust and refrigerate at least two hours. Top with the remaining whipped cream and sprinkle cocoa powder over the top for garnish.
