How To make Creamy Coffee Pie
1/4 c Butter
2/3 c Semisweet chocolate chips
1 1/3 c Graham cracker crumbs
1/2 c Sugar
3 tb Cornstarch
2 ts Instant coffee granules
1/4 c Boiling water
1 1/4 c Milk
3 Egg yolks; lightly beaten
1 3/4 c Whipping cream
1/4 c Sifted powdered sugar
For garnish: Chocolate covered coffee -beans Preheat oven to 375. Melt butter and chocolate chips in top of double boiler. Stir in graham cracker crumbs. Spoon into lightly greased 9 inch pie plate. Bake 8 minutes. Cool on wire rack completely. Mix together sugar and cornstarch in heavy saucepan and set aside. Mix coffee and boiling water together. Stir until coffee dissolves. Stir coffee, milk and yolks into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and boils. Cook 1 minute. Remove from heat. Whisk until smooth. Place a piece of plastic wrap directly on surface and chill 1 hour. Beat whipping cream on low speed until foamy. Slowly add powdered sugar. Beat until soft peaks form. Set aside 1/2 cup whipped cream for topping. Fold whipped cream into coffee mixture. Spoon filling into pie shell. Garnish with reserved whipped cream & coffee beans. THE DESSERT SHOW -----

No Bake Coffee & Cream Pie ~ Piesgiving ~ Noreen's Kitchen
It's here! The very first pie of the 2016 Piesgiving celebration! This year it is doubly auspicious because it is also Torani Friday! To kickoff our pie-palooza, we are starting with a simple, no-bake refrigerator pie that I am calling coffee and cream pie. We are going to use some ingredients from the grocery store that will help you to throw together a pie in no time, that everyone will love!
This starts with a chocolate cookie crumb pie shell. I used the nine inch size. You are always free to make your own from chocolate wafers, but this was so simple and I wanted to make this a pie you could make in a flash, and this one qualifies! I also used two, four serving size boxes of instant vanilla pudding mix along with 2 cups of heavy cream (you don't want to sub out half and half here or the filling will not set properly), some strong brewed coffee and a shot of Torani coffee liqueur flavored syrup. If you don't have the syrup, you can add a shot of Kahlua or other coffee liqueur or you can leave it out if you like.
The ingredients were all whipped together using my hand mixer fitted with the wire whisk attachments until the mixture was thick and creamy and held a stiff peak. Be sure not to over beat or you will end up with an unpleasant butter pie.
I poured the mixture into the cookie crust shell and smoothed it into a swirl. Then I sprinkled instant espresso powder on top of the pie as a nice decoration as well as a flavor booster. The pie needs to be refrigerated for at least two hours before serving, but overnight is best. It will cut much more easily, the longer you chill it.
You can choose to decorate the top with swirls of freshly whipped cream topped with chocolate covered espresso beans if you like. I chose not to this time because I thought the pie was sweet enough and rich enough on it's own. You should go for it and gild the lily as much as you like!

Video kali ini adalah video lanjutan sebelumnya. dan salah satu olahan pastry cream ini adalah pie/tart. untuk kulitnya ini saya pake shortcrust pastry. tapi kalo lebih suka yang ngemprul, bisa pake kulit pie di video pie susu ( Isian dan topping juga bisa divariasiin jadi berbagai macam. selamat coba cobaa :D
*di video sebenernya ada yang saya bikin 1/4 ato 1/2 resep, tapi biar gampang, saya tulis takarannya untuk 1 resep semua aja yah :)
ANEKA PIE MINI
Untuk : 20 buah
Bahan-bahan :
(*Saya juga tuliskan konversi gram-cup dengan catatan : sendok yang saya pakai adalah sendok takar. cup/gelas yang saya pakai adalah gelas 240 ml)
1. PIE BUAH
untuk : 20 buah
Kulit Pie
200g (1 1/2 cup) tepung terigu protein sedang
1 sdm gula bubuk
1/4 sdt garam
100g (7 sdm) mentega, dingin
1 kuning telur
2 sdm air es
Vla / Pastry Cream
2 kuning telur (kalo mo bikin yang versi tanpa telur, 2 kuning telur ini bisa diganti dengan 1 sdm tepung beras/maizena + 2 sdt tepung custard)
200ml (3/4 cup + 4 sdt) susu cair
10g (1 1/3 sdm) tepung maizena
10g (1 1/4 sdm) tepung terigu protein sedang
30-50g (2 1/2 - 4 sdm) gula
15g (1 sdm) mentega tawar
1/2 sdt pasta vanilla
Topping
Potongan buah
Lapisan Agar-agar Bening
100ml (6 2/3 sdm) air
1/2 sdt agar-agar bubuk
1 sdt gula

2. PIE KOPI SUSU
untuk : 20 buah
1 resep kulit pastry
1 resep pastry cream rasa kopi :
1 resep pastry cream + 1 sdt kopi instan
White Chocolate Ganache
120g cokelat masak putih
30ml (2 sdm) susu cair
15g (1 sdm) mentega
sedikit pasta coklat

3. PIE BLACKFOREST
untuk : 20 buah
1 resep kulit pastry + 2 sdm coklat bubuk
1 resep pastry cream rasa coklat :
1 resep pastry cream + 80g dcc (dark cooking chocolate) + 2 sdm coklat bubuk
150-300ml whipping cream (saya pakai yang bubuk 1:2 antara whipping cream bubuk dan air es)
selai strawberry
coklat parut
buah cherry

4. PIE PISANG KARAMEL
untuk : 20 buah
