How to Make Crazy Cake
No butter, no milk, and no eggs needed! Wacky Cake, Crazy Cake, Depression Cake, this super simple, one-bowl cake recipe goes by many names.
RECIPE:
Ingredients
1 1/2 cups all-purpose flour 190g
1 cup granulated sugar 200g
1/3 cup natural unsweetened cocoa powder 35g
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup canola or vegetable oil 80ml
1 Tablespoon white vinegar
1 teaspoon vanilla extract
ICING
1 1/2 cups powdered sugar 190 grams
¼ cup natural cocoa powder 25g
2 tablespoons water
2 teaspoons vanilla extract
⅛ teaspoon salt

Instructions
00:00 Introduction
00:31 Preheat oven to 350F (175C) and lightly grease an 8x8 glass baking dish¹.
00:36 In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
01:14 Make a well in the center of the bowl and add the water, oil, vinegar, and vanilla extract.
01:45 Whisk or stir all ingredients together until batter is smooth.
02:01 Pour batter into prepared baking dish and bake on 350F (175C) for about 35 minutes or until a toothpick inserted in the center comes out clean. Do not over-bake or the cake will be dry.
03:03 Allow cake to cool before frosting.
ICING:
03:24 To prepare the icing, whisk together sugar, cocoa powder, water, vanilla extract, and salt until smooth. Icing should be a thick and fudgy consistency, but should be spread-able. If it is too thick, add additional water one teaspoon at a time until the proper consistency is achieved.
04:51 Once cake has cooled, gently spread frosting evenly overtop. Enjoy!
Notes
¹If you bake this in an aluminum baking dish it might cause the cake to have a metallic taste. If you only have this type of dish, you can line the pan with parchment paper to prevent this.
This cake may instead be baked in a 9x9 or 11x7 baking dish, but keep an eye on it as the baking time will be reduced.
You can make this a vanilla cake by leaving out the cocoa powder.
STORING: Store covered at room temperature for up to 5 days. Cake will keep even longer if stored in an airtight container in the refrigerator by the fridge may dry out the cake a bit.

Ingredients
1/3 cup vegetable oil, plus more for greasing the pan
1 1/2 cups all-purpose flour
1 cup sugar
1/4 cup cocoa powder
1 tsp baking soda
1/2 tsp kosher salt
2 tbsp white vinegar
2 tsp pure vanilla extract
1 cup brewed coffee
2 cups frosting or whipped cream, for serving
Directions
Position an oven rack in the middle of the oven and preheat to 350 degrees F. Grease an 8-by-8-inch baking pan with vegetable oil.
Sift the flour, sugar, cocoa powder, baking soda and salt through a fine-mesh strainer directly into the prepared baking pan. Stir together with a fork (or a silicone whisk if using a nonstick baking pan). Add the oil, vinegar, vanilla and coffee; stir with the fork until fully incorporated. Bake until a toothpick inserted into the center comes out clean, about 35 minutes.
Let the cake cool completely in the pan on a wire rack, about 1 hour. Frost the top of the cake with the frosting, if using. Cut into 9 squares and serve each with a dollop of whipped cream, if using.

Wacky Cake
Wacky Cake, also known as Crazy Cake, or even Crazy Wacky Cake, was coined as such because the recipe does not use eggs nor butter.

Ingredients
1 1/2 cup all-purpose flour
1 cup white sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup unsweetened cocoa powder
6 tablespoons canola oil
1 tablespoon white vinegar
1 teaspoon vanilla extract
1 cup cold water
powdered sugar
Instructions
Preheat oven to 350 degrees F.
In an 8-inch square baking pan, whisk together the flour, sugar, salt, baking soda and cocoa.
Use a spoon to make three wells in the dry ingredients, one large well and two smaller wells. Pour the oil into the largest well, the vinegar into one of the smaller wells, and the vanilla into the last well. Pour the cold water over the top of everything and stir it all together with a fork.
Immediately transfer pan to the oven and bake for 30 to 35 minutes.
Remove cake to a wire rack to cool. When cooled, cut into squares and sift powdered sugar over the top.

For the cake:
1½ cups (190g) All-purpose flour
1/4 cup (30g) Cocoa powder
1 teaspoon Baking soda
1/4 teaspoon Salt
1 cup (200g) Sugar
1/3 cup (80ml) Vegetable oil
1 cup (240ml) Water
1 teaspoon Vanilla extract
1 tablespoon Vinegar or lemon juice
For the chocolate ganache:
2 tablespoons (30g) Coconut oil
1/3 cup (40g) Cocoa powder
1/3 cup (100g) Maple syrup/agave syrup
1 teaspoon Vanilla extract
Directions:
1. Preheat oven to 350F (180C). Grease a 8-inch (20cm) round cake pan and set aside.
2. In a large bowl, stir flour, cocoa powder, baking soda, salt and sugar.
3. Add water, oil, vinegar and vanilla extract. Stir until combined.
4. Pour the batter into prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 10 minutes, release from the pan, then let to cool to room temperature.
5. Make the frosting (optional): In a bowl stir coconut oil, maple syrup and vanilla extract. Add cocoa powder and whisk until combined and smooth.
6. Pour the glaze over the cake, spread evenly and refrigerate until set, about one hour.
Notes:
• The ganache is optional. You can serve the cake without the ganache and dust it with icing sugar.
• For extra rich flavour you can use coffee instead of water.
• Other options for chocolate ganache: coconut cream + dark chocolate. In a bowl place 100 grams chopped chocolate, pour 1/3 cup (80ml) hot coconut cream, let sit for 1-2 minutes, then stir and combined and smooth.
