How To make Stir Crazy Cake
2 1/2 c All-purpose flour
1 1/2 c Sugar
1/2 c Cocoa
2 t Soda
1/2 t Salt
2/3 c Cooking oil
2 T Vinegar
1 T Vanilla
2 c Cold water or coffee
1/4 c Sugar
1/2 t Cinnamon
Put flour, 1 1/2 cups sugar, cocoa, soda and salt into an ungreased 13X9X2 inch metal baking pan. Stir with a fork to mix;form 3 wells in flour mixture. Pour oil into one well, vinegar in one and vanilla in one. Pour cold coffee over all ingredients and stir with fork until well mixed. Do not beat. Combine remaining sugar and cinnamon;sprinkle over batter. Bake in 350 deg. oven for 35-40 mins.

Ingredients:
4 pieces Boneless chicken thighs
Garlic oil:
120ml Rapeseed oil
100g Garlic cloves
Marination:
1/8 tsp White pepper powder
1 tbsp Light soy sauce
1/2 tbsp Potato starch
Sauce:
65g Spring onions
65g Red shallots
25g Ginger
10nos Fried garlic cloves
1 tbsp Shaoshing wine
1 tsp Light soy sauce
1/4 tsp Dark soy sauce
1.5 tbsp Oyster sauce
1/2 tsp Chicken powder
6g Yellow rock sugar
25ml Water

Pat's version uses cold coffee instead of water so let's hit the trail and get going. Thanks Pat!
Honestly, I think the coffee makes the cake richer and have a deeper chocolate taste.
And I did end up putting a simple frosting on. That nice crust on top still comes through with a coating of frosting. Mart likes the vanilla/chocolate combo.
The pounding is Martin changing a wheel drum that has rusted on the vehicle! He will definitely like the cake break today!
350 degrees 35-40 minutes
2 1/2 cups flour

1 teaspoon vanilla
2 cups cold coffee (you can use water instead)

cinnamon

Make 3 wells in the dry ingredients.
Put oil in one, vanilla in another and vinegar in the last one
Pour cold coffee over this and stir until mixed. Do no beat!
Sprinkle cinnamon sugar over the mixture
Bake 350 degrees for 35-40 minutes or until a stick inserted comes out clean.
Pat says this is best warm but it is good warm or cold.
