Vanilla Crazy Cake
This easy recipe for vanilla crazy cake is made with only pantry staples. It’s also known as wacky cake or depression cake. This recipe originated in the depression era and is a white cake without eggs or milk that’s still moist and delicious!

INGREDIENTS
1 1/2 cups flour
1 cup sugar
1 tsp baking soda
1/2 tsp salt
5 tbsp vegetable oil
1 tbsp white vinegar
1 tsp vanilla
1 cup water cold
INSTRUCTIONS
Preheat oven to 350 degrees.
In an UNGREASED 9X9 pan add the flour, sugar, baking soda and salt. Using a whisk stir together the ingredients right in the pan to kind of sift it all together.
Next using your fingers or a spoon make a good sized well in the middle and two smaller wells one on each side of the center well.
Place the vegetable oil in the center well.
Place the vinegar in a small well and the vanilla in the other small well.
Pour the cold water over all of the ingredients.
Using the whisk, stir until combined. You can also use a spoon to get into the corners and further mix until smooth. If there are bubbles in your batter, gently tap the pan on the countertop to release the bubbles.
Bake for 25-30 minutes or until cake tester comes out clean. Remove from oven to cool completely before serving.
Ice with frosting or powdered sugar or plain.
TO MAKE VANILLA FROSTING:
You will need
1/2 cup butter, melted
1/2 teaspoon vanilla (clear vanilla, if you have it)
5 cups powdered sugar
¼ cup milk or more if needed for desired consistency
Place the melted butter in a medium mixing bowl. Add the vanilla, powdered sugar, and milk. Using a mixer, mix together until smooth. May need additional milk to reach desired consistency. Beat for 2-3 minutes scraping down the sides intermittently.
Recipe for both cake and frosting can be easily doubled for a 9×13 plan.
If using an 8×8 pan, increase cooking time by 3-6 minutes as cake will be thicker.

Today we’re once again bringing you an easy, pantry staples dessert recipe. This chocolate cake is termed “crazy” because of its ingredients and the way it is mixed. It’s also been termed “wacky cake” or “funny cake”.
It’s an old fashioned classic recipe that is a MUST for your recipe box. It’s light, it is fluffy and full of chocolate flavor. Plus, it makes just a small 8×8 cake…perfect for snacking!
How to Make Crazy Cake
No butter, no milk, and no eggs needed! Wacky Cake, Crazy Cake, Depression Cake, this super simple, one-bowl cake recipe goes by many names.
RECIPE:
Ingredients
1 1/2 cups all-purpose flour 190g
1 cup granulated sugar 200g
1/3 cup natural unsweetened cocoa powder 35g
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup canola or vegetable oil 80ml
1 Tablespoon white vinegar
1 teaspoon vanilla extract
ICING
1 1/2 cups powdered sugar 190 grams
¼ cup natural cocoa powder 25g
2 tablespoons water
2 teaspoons vanilla extract
⅛ teaspoon salt

Instructions
00:00 Introduction
00:31 Preheat oven to 350F (175C) and lightly grease an 8x8 glass baking dish¹.
00:36 In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, and salt.
01:14 Make a well in the center of the bowl and add the water, oil, vinegar, and vanilla extract.
01:45 Whisk or stir all ingredients together until batter is smooth.
02:01 Pour batter into prepared baking dish and bake on 350F (175C) for about 35 minutes or until a toothpick inserted in the center comes out clean. Do not over-bake or the cake will be dry.
03:03 Allow cake to cool before frosting.
ICING:
03:24 To prepare the icing, whisk together sugar, cocoa powder, water, vanilla extract, and salt until smooth. Icing should be a thick and fudgy consistency, but should be spread-able. If it is too thick, add additional water one teaspoon at a time until the proper consistency is achieved.
04:51 Once cake has cooled, gently spread frosting evenly overtop. Enjoy!
Notes
¹If you bake this in an aluminum baking dish it might cause the cake to have a metallic taste. If you only have this type of dish, you can line the pan with parchment paper to prevent this.
This cake may instead be baked in a 9x9 or 11x7 baking dish, but keep an eye on it as the baking time will be reduced.
You can make this a vanilla cake by leaving out the cocoa powder.
STORING: Store covered at room temperature for up to 5 days. Cake will keep even longer if stored in an airtight container in the refrigerator by the fridge may dry out the cake a bit.
