How To make Cranberry Lemon Bread
4 tb Butter; softened
3/4 c Sugar
2 Eggs
2 ts Lemon rind; grated
2 c Flour; sifted
2 1/2 ts Baking powder
1 ts Salt
3/4 c Milk
1 c Fresh cranberries; chopped
1/2 c Pecans; chopped
2 ts Lemon juice
2 tb Sugar
Preheat oven to 350~F. Cream together butter and 3/4 cup sugar in mixing bowl, until light and fluffy. Add eggs one at a time. Add lemon rind. Beat well. Sift together flour, baking powder, and slat. Add to batter alternately with milk. Beat until smooth. Fold in cranberries and pecans. Pour batter into greased loaf pan. Bake about 55-60 minutes. Cool in pan 10 minutes. Turn out onto rack. When completely cool, combine lemon juice

Ingredients:
All purpose flour-2 cups ( 260 g)
Baking powder-1&1/2 teaspoon
Baking soda-1/4 teaspoon
salt-1/4 teaspoon
melted butter / vegetable oil-1/2 cup (120 ml)
sugar-1 cup (200g)
egg-1 large ( at room temperature)
vanilla essence- 1teaspoon
orange zest-1 teaspoon
buttermilk-2/3 cup ( 160 ml)
cranberries-120 g ( I used dried cranberries, you can use fresh cranberries if available)
Buttermilk substitute:
milk-2/3 cups + 1&1/2 teaspoon lemon juice or white vinegar.
mix and let it sit for 15 minutes.
Baking:
pan size I used: 8X2 inch loaf pan
time:
Preheat oven( 170c for 10 minutes)
Bake at 170c for 55-65 minutes.
