How To make Cranberry Crisp Coffeecake
-Sue Woodward 1 1/2 c Kellogg's Sugar Frosted
-Flakes cereal; crushed to -3/4 cup 1 tb Margarine or butter; melted
1 1/2 c Flour
2 ts Baking powder
1/2 ts Salt
1/4 c Margarine or butter; softend
3/4 c Sugar
1 Egg
1/2 c Milk
1 c Whole cranberry sauce
Mix crushed cereal with melted margarine. Set aside. Stir together flour, baking powder, and salt. Set aside. Beat the 1/4 cup margarine, the sugar, and egg until well blended. Add milk alternately with flour mixture, mixing until smooth. Spread batter in greased 9" round cake pan. Top evenly with cranberry sauce. Sprinkle with cereal mixture. Bake at 350~ about 50 mins. Apple Cranberry Crisp: The Easiest Dessert on Earth!
This apple cranberry crisp recipe is a classic simple baking recipe with out of this world flavour.
I share the top-secret to make this even easier and faster to make.
This is a beautiful and delicious five-ingredient dessert that could not be easier.
Note: this is an apple cranberry crisp and NOT an apple-cranberry crumble. The main difference is that a crumble has oats whereas the crips does not have oats.
This recipe is an amazing autumn recipe and a perfect way to use up your apples and cranberries. This would be a perfect dessert for Thanksgiving as it captures all of the flavours of fall.

RECIPE: Apple Cranberry Crisp
Printable Recipe:
SERVES 6
Ingredients:
• ¾ cup (165 g) packed brown sugar
• ½ cup (75 g) all-purpose flour
• ½ cup (115 g) butter, very cold from the fridge or freezer
• 6 medium apples (any type - or a mix)
• ⅓ cup dried unsweetened cranberries
Instructions:
1. Preheat the oven to 375F.
2. To make the topping, stir the brown sugar with the flour in a large bowl. Grate in the cold butter using the large holes of a box grater. Toss the mixture to combine it and coat all the butter with the dry mixture.
3. Peel and slice the apples. Put the slices into a 9-inch pie plate (or any similar-sized baking dish) and stir in the cranberries. Sprinkle the butter mixture evenly overtop.
4. Place the pie plate on the baking sheet, then bake 35 to 45 minutes or until the topping is golden brown and the filling is bubbly at the edges. Serve warm with ice cream or pouring cream.

BLUEBERRY CRUMB CAKE RECIPE
Makes 9 squares

INGREDIENTS:
½ cup (120g) of butter
¾ cup (150g) sugar
2 eggs
1 tsp (5 ml) vanilla
2 cups (240g) of flour
2 tsp (10 ml) baking powder
½ tsp (2.5ml) salt
½ cup (120 ml) milk
2 cups (300g) fresh blueberries
Topping:
1 cup (200g) of sugar
½ cup (60g) flour
1 tsp (5 ml) cinnamon
½ cup (120g) butter
METHOD:
Preheat oven to 350F (175C).
Spray a square 10” x 10” (25cm x 25cm) pan with baking spray. Set aside
In the bowl of an electric mixer beat together butter and sugar until smooth and fluffy, add eggs one at a time and beat well until light and fluffy, add vanilla. Set aside.
In a small bowl combine flour, baking powder and salt whisk together. Add flour mixture in thirds, alternating with the milk until a batter forms. Remove bowl from the mixer.
Fold in blueberries. Transfer batter to pan. Set aside.
In a small bowl whisk together the topping. Add the sugar, flour and cinnamon. Whisk to combine. Cut in butter with hands until small crumbs form. Sprinkle topping on top of batter until a layer is formed and batter is fully covered.
Bake 40-45 mins until golden brown and a toothpick comes out clean. Allow to cool completely. Run sharp knife along perimeter of cake to loosen before removing it. Cut into 9 squares and serve!
