But what makes this Coffee Cake so unique is the grainy crumb mixture that sits on top of the cake and runs through its center. You can serve this cake while it's still warm from the oven, at room temperature, or even cold. Leftovers can be covered and stored for a few days at room temperature.

Buttermilk is one of my favourite ingredients to use when it comes to baking! I use it in so many of my recipes, including my soft vanilla cake and red velvet cake. If you’re in a pinch and don’t have buttermilk on hand, or can’t easily access it, you can make a great buttermilk substitute right at home.
INGREDIENTS:
- 1 cup (250 ml) milk
- 1 tbsp (15 ml) white vinegar - lemon juice okay too

To start, you'll need to gather your ingredients: buttermilk, flour, baking powder, baking soda, salt, butter, sugar, eggs, vanilla extract, brown sugar, cinnamon, powdered sugar, and milk. Mix together the dry ingredients in a bowl and set aside. In a separate bowl, cream together the butter and sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Next, slowly add in the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined, being careful not to overmix. In a small bowl, mix together the brown sugar and cinnamon to create the streusel topping.
Pour half of the batter into a greased 9x13 inch baking dish, then sprinkle with half of the streusel topping. Repeat with the remaining batter and topping. Bake in a preheated oven at 350°F for 35-40 minutes or until a toothpick inserted into the center comes out clean.
When the coffee cake is finished baking, let it cool for a few minutes before drizzling with a simple powdered sugar and milk glaze. Serve warm and enjoy!
