Green Bean Casserole

Ingredients
2 pounds fresh green beans, ends cut off
Salt
4 slices bacon, cut into 1/4-inch pieces
3 cloves garlic, minced
1 red bell pepper, diced
1/2 whole large onion, chopped
4 tablespoons (1/2 stick) butter
4 tablespoons all-purpose flour
2 1/2 cups whole milk, plus extra for thinning if needed
1/2 cup half-and-half
Freshly ground black pepper
1/8 teaspoon cayenne pepper
1 cup grated sharp Cheddar
1 cup panko breadcrumbs
Directions
Preheat the oven to 350 degrees F.
Cut the green beans in half if you like the pieces to be a little smaller. Blanch the green beans: drop them into lightly salted boiling water and allow the green beans to cook for 3 to 4 minutes. Remove them from the boiling water with a slotted spoon and immediately plunge into a bowl of ice cold water to stop the cooking process. Drain the beans once they're cool and set aside.
Add the bacon pieces to a skillet over medium heat. Cook the bacon for 2 minutes, and then add the peppers, garlic and onions, and continue cooking until the bacon is done (but not crisp) and the onions are golden brown, 3 to 5 minutes. Remove from the heat and set aside.
In a separate saucepan, melt the butter over medium heat. Sprinkle the flour into the pan and whisk immediately to evenly mix it into the butter. Cook for a minute or 2, and then pour in the milk and half-and-half. Continue cooking, whisking constantly, while the sauce thickens, about 2 minutes. Add 1 1/2 teaspoons salt, some black pepper and the cayenne, and then add the grated cheese. Stir while the cheese melts. Turn off the heat.
Add the bacon/onion mixture and stir to combine. Add the green beans and stir gently to combine. Pour into a baking dish and top with the panko. Bake until the sauce is bubbly and the panko is golden, about 30 minutes.

ROASTED GARLIC CAULIFLOWER MASH
1 medium head of cauliflower cut into florets
1/2 cup cashew cream (blend 1/4 cup soaked cashews and 1/2 cup water)
1 bulb of roasted garlic
2-4 tbsp chopped chives
3/4 1 tsp salt or to your taste
1/4 tsp ground black pepper
NOTE: For nut-free use coconut milk
Steam cauliflower until just soft. Combine remaining ingredients, except for chives in a food processor and blend into a mash potato consistency.
GREEN BEAN CASSEROLE
1 lbs of green beans cut into 1.5 inch pieces
4 oz diced mushrooms
1/3 cup chopped leeks (you can also use green onions)
SAUCE:
1 1/2 cups of cashews (soaked for min. 2 hours)
1 1/2 cups plant milk of choice
2 tbsp nutritional yeast (or 1 tbsp miso paste)
1 clove of garlic
1/2 tsp onion granules
1/2 tsp garlic granules
1 tsp salt or to taste
ground pepper to taste
3/4 cup almond crumbs ( )
NUT-FREE SAUCE:
¼ cup sunflower seeds ( soaked for 1+ hours)
1 ¼ cups or 15 oz. cannellini beans
1 cup broth or plant milk
2 tbsp nutritional yeast (or 1 tbsp miso paste)
1 clove of garlic
1/2 tsp onion granules
1/2 tsp garlic granules
1 tsp salt or to taste
ground pepper to taste
Combine sauce ingredients in a high speed blender and blend until smooth.
Add green beans, mushrooms, and leeks to a casserole dish.
Add sauce and mix to combine. Cover and bake at 350 F for 45 mins, or until green beans are cooked.
If you find that your casserole is getting a little dry before your beans are cooked, you can add small amounts of plant milk or broth and continue baking.
Remove and top with almond flour bread crumbs. Optional to bake uncovered for an additional 5-10 minutes.
CRANBERRY SAUCE
12 oz. cranberries
1 cup date paste
1 cup water
1 cinnamon stick or 1/2 tsp ground cinnamon
1/2 tsp orange zest
Combine water and date paste and mix until smooth. Heat to a simmer and add cranberries and other ingredients.
Mix and bring to a simmer. Allow to cook until cranberries pop and crack. You can cook the cranberries longer if you prefer them soft.
Transfer to a bowl and set aside to cool and thicken.
For a saucier consistency, pulse slightly with an immersion blender.
