Casserole with apples, cranberries and dried apricots
So simple and so delicious.
Rice short grain - 200 g
Water – 3 cups (650 ml)
Salt - 1 tsp.
Dried cranberries (washed in hot water) – 3 tbsp
Dried apricots (rinse in warm water) - ½ cup
Apples – 20 oz (300 g)
Butter – 3 tbsp
Egg - 1
1. Rinse the rice several times in cold water.
2. Bring water to a boil, add salt and rice.
3. Simmer 15-20 minutes. Remaining water does not need to be drained.
4. In a bowl combine rice, butter (2 tbsp), egg, dried apricots and dried cranberries. Add the chopped apples.
5. Put into a dish, add a little bit of butter on top.
6. Bake in the oven 350°F / 180° C for 40 minutes.
Serve warm with sour cream and jam.
Cranberry, of course, can be replaced with raisins, but it is more delicious with cranberries.

CRANBERRY APPLE CASSEROLE
Preheat over to 350 degrees F.
3 cups unpeeled apples, diced
2 cups whole fresh cranberries, rinsed & dried
1 1/4 cups sugar
1/2 cup brown sugar
1/3 cup all-purpose flour
1 1/2 cups oatmeal
1/3 cup pecans, chopped
1/2 cup butter (1 stick), melted
1. In a large mixing bowl whisk together sugars & flour. Add cranberries and apples to sugar mixture. Toss well. Add fruit mixture to a buttered 9 by 13 baking dish (mixture maybe divided for (2) 8 by 8 baking dishes.
2. Mix together oatmeal, pecans and melted butter. Sprinkle evenly on top of fruit mixture.
3. Bake for 1 hour. Cool. Serve.
TIPS: Freeze unbaked casserole in baking dish. Seal airtight with plastic wrap or foil before freezing. Preheat oven before baking frozen fruit casserole.
Squash Casserole Recipe and Cranberry Sauce

Grandma’s Yellow Squash Casserole
Serves 6
1 stuck butter
1 medium onion, diced small
1 package Pepperidge Farm Corn Bread Stuffing
10 small yellow squash (or 8 medium size), diced medium
1 medium size carrot, grated
1 teaspoon garlic powder
1 can Campbell’s Cream of Chicken Soup
1 cup sour cream
Heat a large skillet over medium high heat for 1 minute. Add the butter and onions and reduce the heat to medium low. Sauté onions until soft: about 10 minutes. Remove 2 tablespoons of the onion / butter mixture and set aside. Place the breadcrumbs in a large bowl and add the onion / butter mixture. Mix well and set aside. Heat a medium size sauce pot over medium high heat for 1 minute. Add the squash and sauté for 8-10 minutes or until softened. Add the 2 tablespoon reserved onions / butter mixture, grated carrot, garlic powder and salt and pepper to taste. Cook for 1 minute. Add the squash to a large bowl. Add the soup and sour cream and stir to combine. Place 3 tablespoon of the stuffing mixture to the bottom of a medium size baking dish. Add the squash mixture and top with the breadcrumb / onion mixture. *If using the following day, cover with foil and refrigerate. Bake at 350 degrees for 20 - 25 minutes, or until lightly browned on top.
Cranberry Sauce
1 cup sugar
1 cup water
1 bag fresh cranberries
Zest of one orange
Juice of one orange
Lemon wedge
Add the sugar and water to a medium size sauce pot and bring to a simmer over medium high heat. Add the cranberries and reduce heat to medium. Simmer for one minute and add the orange zest. Simmer form 2 minutes and ad the orange juice. Simmer until all the cranberries have popped open and sauce thicken; about 3 minutes. Place the sauce in a bowl and let cool for 45 minutes before refrigerating. Add the juice of one lemon wedger and stir just before serving.

Spiced Cranberry Coffee Cake
Spiced Cranberries:
4 cups fresh or frozen cranberries
2 cups water
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon orange zest
Coffee Cake:
3 cups all-purpose flour, plus more for coating baking dish
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon kosher salt
1 1/2 sticks unsalted butter, plus more for greasing baking dish
1 1/2 cups granulated sugar
1 1/2 cups low-fat buttermilk
3 large eggs
2 teaspoons orange zest
2 cups spiced cranberries, divided
1 cup walnuts, roughly chopped
Icing:
1 1/4 cups confectioners sugar
3 tablespoons milk
For Spiced Cranberries:
1.Combine all the ingredients in a large saucepan over medium high heat. Bring to a boil and cook until the cranberries just begin to burst. Reduce to a simmer and continue to cook cranberries 30 more minutes, until the sauce is rich and thick. Remove from heat and let cool.
For Coffee Cake:
1.Preheat oven to 350F.
2.Coat a 9x13 inch baking dish with butter and dust with flour.
3.In a medium bowl whisk together the flour, baking powder, baking soda and salt.
4.Using an electric mixer fitted with the paddle attachment beat the butter and sugar until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl to combine everything.
5. In a medium bowl whisk together the buttermilk, eggs and orange zest until combined.
6.Add the dry ingredients into the butter and sugar mixture and beat on low speed. Slowly add in the buttermilk mixture until the batter just comes together.
7.Evenly pour and spread half of the batter into the prepared baking dish, scatter half of the spiced cranberries over top. Add the remaining batter over the cranberries, evenly smoothing the top with a rubber spatula and repeat with remaining spiced cranberries on top. Sprinkle walnuts all over the top of cake.
8.Bake until the cake is golden brown and a toothpick inserted into the center comes out clean, 45 to 50 minutes. Let cool for 5 minutes.
For Icing:
1.Whisk together the confectioners sugar and milk until smooth. Drizzle the icing over the warm cake. Serve warm or at room temperature.
Serves 6-8
