It has been a while, but we are back with another recipe! The video for this one was actually filmed back in March 2022 when we rented out an Airbnb in Rochester, MN to film at for a week. We filmed SO many great new recipes for you, but life has gotten in the way and thrown us a few curveballs since then. Do not fear! We will still be sharing all of the recipes, just at a slower pace than originally planned.
These “Not-So-Crabby” Cakes are actually made with Lion’s mane mushrooms, which is one of our favorite ingredients to work with. We are very lucky to have a local place in St. Louis called VL’s Urban Farm that sells amazing, VERY high quality mushrooms, including these giant beauties. They actually have an online shop where you can buy grow kits for some of their mushrooms, so check them out here even if you aren’t in St. Louis!
It’s hard to believe this giant fluffy thing is a mushroom, but when you cook it with the proper techniques, it turns into the tastiest completely plant-based, vegan, oil-free “Not-So-Crabby” cakes you’ll ever have!
We do realize that Lion’s mane can be hard to find and VERY expensive, so we did some experimenting with other ingredients and found a substitute that is more readily available and a whole lot cheaper. Check out the video and blog post for more info.

Lion's Mane Crab Cakes (Vegan optional)
In the never-ending quest for plant-based meat substitutes, once you stumble upon Lion's Mane mushrooms and work with it a bit, it's easy to see how it picks apart and texturally resembles crab. Home cooks use hearts of palm too, but it always ends up a little watery, in my opinion. Pound for pound using Lion's Mane is no cheaper than buying real lump crab meat, but if you want to sink your teeth into something a bit meatier while staying plant-focused, Lion's Mane is worth a try. To make the recipe vegan, simply swap out with an egg substitute.
INGREDIENTS
1 pound Lion’s Mane mushrooms, picked into “crab-like” pieces
1/4 cup vegan mayonnaise
1 teaspoon Dijon mustard
1 teaspoon tamari
1 tablespoon Old Bay seasoning
1 egg*
1/2 lemon, zested
1 celery stalk, finely diced
2 tablespoons parsley, minced
2 tablespoons chives
1/4 cup gluten-free panko plus more for breading
oil for pan-frying (neutral oil such as avocado, 2-3 tablespoons)
LEMON SAUCE
1/4 cup vegan mayonnaise
1/2 lemon, juice
1/2 lemon, zested
1/2 teaspoon salt
*To make this recipe vegan, swap the egg with ¼ cup Just Egg or another vegan egg replacement.

Lion's Mane Crab Cake Recipe - One of my all-time favorites!
This is my recipe for making Lion's Mane mushroom crab cakes. If you are ever lucky enough to grow or forage lion's mane this is a great way to enjoy it. I grew the mushrooms used in this video in my basement from a block that I bought from North Spore -
Ingredients to make 2 large patties:
1/2 lb. lion's mane
1 egg
4-6 cloves minced garlic
2-3 tbsps. corn meal
one handful of chopped green onion
one handful chopped cilantro
2 tbsps. mayonnaise
juice from 1/2 lime
seasoning to taste with salt, curry powder, red pepper, black pepper
1-2 tbsps. olive oil for cooking
