Cooking with Rania Crab stuffed Mushrooms

This recipe for crab-stuffed mushrooms is perfect for a last minute holiday appetizer or to add to your repertoire for the Feast of the Seven Fishes!

Here's Rania Harris's recipe:
30 Baby Bella mushrooms, stems removed and wiped clean with a damp paper towel – chop the stems for the filling
2 tablespoons extra virgin olive oil
½ small sweet onion – diced
2 cloves garlic, minced
4 ounces cream cheese, room temperature
1 tablespoon mayonnaise
1 dash Frank’s red hot sauce
½ cup freshly grated Parmesan cheese
Three quarters of a pound lump crab meat – picked over for any shells
Sea salt to taste
2 tablespoons finely chopped fresh chives
Directions:
Preheat oven to 375°
Heat olive oil in a skillet. Add the chopped mushroom stems, onion and garlic and cook stirring often until the mushroom stems give off their liquid and it evaporates, about 5 minutes. Let cool completely.
In a large bowl, mash together the cream cheese, mayonnaise and Frank’s red hot sauce with a spatula until well combined. Mix in the mushroom mixture along with ¼ cup of the Parmesan cheese. Gently fold in the crab meat and then season with salt to taste.
Fill each mushroom with some of the crab mixture, mounting it slightly. Sprinkle the filled mushrooms with the remaining ¼ cup Parmesan cheese. Arrange the stuffed mushrooms on a parchment lined half sheet pan.
Bake for 15 minutes, until mushrooms are tender and the filling is hot and the cheese is golden brown. Transfer to a platter and sprinkle with chives and then serve immediately
Makes 30 stuffed mushrooms
Note: The mushrooms can be prepared, covered with plastic wrap and refrigerated up to 8 hours before baking and serving.

It has been a while, but we are back with another recipe! The video for this one was actually filmed back in March 2022 when we rented out an Airbnb in Rochester, MN to film at for a week. We filmed SO many great new recipes for you, but life has gotten in the way and thrown us a few curveballs since then. Do not fear! We will still be sharing all of the recipes, just at a slower pace than originally planned.
These “Not-So-Crabby” Cakes are actually made with Lion’s mane mushrooms, which is one of our favorite ingredients to work with. We are very lucky to have a local place in St. Louis called VL’s Urban Farm that sells amazing, VERY high quality mushrooms, including these giant beauties. They actually have an online shop where you can buy grow kits for some of their mushrooms, so check them out here even if you aren’t in St. Louis!
It’s hard to believe this giant fluffy thing is a mushroom, but when you cook it with the proper techniques, it turns into the tastiest completely plant-based, vegan, oil-free “Not-So-Crabby” cakes you’ll ever have!
We do realize that Lion’s mane can be hard to find and VERY expensive, so we did some experimenting with other ingredients and found a substitute that is more readily available and a whole lot cheaper. Check out the video and blog post for more info.

Vegan Crab Stuffed Mushrooms

Don't be crabby! Make these Vegan Crab Stuffed Mushrooms...see what I did there ;)
Fear not! No sea creatures were harmed in the making of these tasty morsels. However, these stuffed mushrooms have a wonderful ocean-like flavor that will leave you wondering when the next batch will be cooked up. I used nori to give a salty sea flavor and hearts of palm to give that crabby texture. These have a Cajun spice that is ultra savory with a Roasted Red Pepper Remoulade that is just mouth watering. Trust me, these tasty little bites will be a hit at any gathering.
Crab Snacks ~ Easy and delicious appetizer
Ingredients:
1 stick butter, softened
1 jar, Old English Cheese
1 1/2 tsp. mayonnaise
1/2 tsp. garlic salt
1/2 tsp. seasoned salt
1/2 pound crabmeat
6 English Muffins
Split English Muffins in half and place on a sheet tray. Mix butter, cheese, mayonnaise, and salts in a bowl. Fold in crabmeat, careful not to break up into pieces.
Spread mixture evenly on muffins. Freeze for at least 30 minutes and cut into six pieces. Place pieces on tray and cook immediately (or put in freezer bag for later.)
Broil for 5 to 6 minutes until golden brown.
