In this video, my grandmother is going to show us how to make Moroccan couscous with meat and vegetables using the traditional Moroccan couscous pot. The meat and vegetables are cooked in a sauce, while the couscous is steamed and flavored with clarified butter. It may seem that you need a lot of steps, but it is actually very easy to make. Your family and friends will not believe that you made this dish! enjoy :-)
Couscous Fritters | Couscous Recipe With Chicken Stock
Couscous Fritters
Ingredients
Couscous - 3/4 cup
Chopped Onion - 1 no
Salt
Chopped Green Chili - 1 no
Red Chili powder - 1/2 tsp
Eggs - 2 no
Chicken stock - 1/2 cube
Chopped Ginger - 1 small
Chopped Coriander leaves
Chopped Mint leaves
Water - 3/4 cup

Method:
1.To prepare the chicken stock: Heat water, drop the chicken cube, to this add ½ tsp chilli powder, once all this is dissolved, turn off the stove and drop in the couscous, mix it gently and let it sit for about 15 to 20 minutes. (The couscous soaks up all the stock)
2.Transfer the couscous to another bowl, to this add onions, mint leaves, green chillies, ginger, coriander leaves, and mix it well.
3.Beat eggs slightly and pour it into the mixture. Gently mix it together.
4.Take a deep pan. Pour enough oil to fry. Take a small portion of the mixture, roll it up and deep fry it. (Make sure oil is hot enough before frying)
Crunchy couscous fritters are ready to serve.

Antigaspi recepten: Pannenkoek van couscous, feta en gedroogde tomaten
Ingrediënten :
200 g gekookte couscous
1 ei
1 plakje feta
10 g geraspte kaas
Enkele gedroogde of gekonfijte tomaten
Gehakte peterselieblaadjes
Zout
Gewone olie (zonnebloemolie of druivenpittenolie)
Rucola
Peper
1. Doe de gekookte couscous in een kom, doe er het ei bij, ¾ van de feta, de geraspte kaas, de gedroogde tomaten, de gehakte peterselieblaadjes en 2 snuifjes zout. Vermeng dit voorzichtig totdat het mengsel homogeen is.
2. Verwarm een pan en doe er een scheutje olie in. Als de pan goed warm is, giet het mengsel van griesmeel erin en druk erop met de onderkant van een lepel tot de vorm van een pannenkoek. Laat 3 tot 4 min bakken op een matig vuur en draai de pannenkoek om met behulp van een plat bord. Laat de pannenkoek opnieuw glijden in de koekenpan zodanig dat de andere kant kan bakken.
3. Na enkele minuten baktijd op de andere kant, laat de griesmeelpannenkoek glijden op een plank of een groot bord en versier ze met enkele blaadjes rucola en de rest van de feta.
4. Snijd de griesmeelpannenkoek in stukken zoals een pizza.
