Cornbread Chili Bowl | Hungry AF
Why eat chili out of a regular bowl when you can eat it out of a cornbread bowl?

INGREDIENTS
For the chili:
1 lb lean ground beef
½ cup red bell pepper, diced
½ cup green bell pepper, diced
½ cup red onion, diced
4 garlic cloves, minced
½ cup canned red beans, drained and rinsed
28 oz canned crushed tomatoes
1 tsp cumin
1 tsp cayenne
1 tsp paprika
2 tsp worcestershire sauce
salt and pepper, to taste
shredded cheddar cheese to serve
sour cream to serve
For the cornbread bowl:
½ cup melted butter
½ cup sugar
2 eggs
1 ½ cups milk
1 ½ cups all-purpose flour
1 cup yellow cornmeal
2 tsp baking powder
½ tsp salt
RECIPE
In a pot, brown the ground beef and stir in onions, garlic, peppers, spices, salt and pepper. Cook for about 10 minutes on medium-high heat.
Add crushed tomatoes, beans, and worcestershire sauce. Stir well, cover, and cook on low heat for 1-2 hours.
Preheat oven to 375F. In a large bowl, whisk melted butter and sugar together. Then mix in the eggs and milk, until fully combined.
In another bowl, combine flour, cornmeal, baking powder, and salt.
Stir dry ingredients into the wet ingredients, until well combined.
Pour the batter into a greased baking dish, and bake for about 25-30 minutes. Test doneness by inserting a toothpick in the center. The cornbread is ready when it comes out clean. Set aside to slightly cool.
Use a small knife to cut out a well in the center of the cornbread.
Fill the center of the cornbread bowl with chili, and then top with cheese and sour cream.

Recipe - Cornmeal waffles with spicy chilli
INGREDIENTS:
●210g plain flour
●200g yellow cornmeal
●1 tbsp baking powder
●1 tsp sugar
●500ml milk
●3 tbsps vegetable oil
●2 large eggs
●Spicy chilli, recipe follows
●Shredded cheddar, for garnish
●Sour cream, for garnish
●Chopped fresh coriander leaves, for garnish
●500g lean beef mince
●1 onion, chopped
●1 green capsicum, chopped
●2 cloves garlic, minced
●2 tbsps chilli powder
●1 tbsp ground cumin
●1 tsp salt
●1 tbsps fresh ground black pepper
●2 (425g) tins ranch-style beans
●1 (425g) tin tomato sauce
●1 (425g) tin niblet corn, drained
●1 (280g) tin diced tomatoes and green chiles
Spicy Cornbread Waffles
For a spicy and savory start to your day, make these easy cornbread waffles. Top with an egg, with bacon or sausage, or go for honey or maple syrup for a sweet and spicy palate. These spicy cornbread waffles also make great accompaniments for lunch or dinner. Top with chili and cheese, or just some old fashioned gravy, for a great side or main dish. Spicy Cornbread Waffles
Ingredients:
1/2 Cup Papa Tom's Stone Ground Corn Meal
1/2 Cup All Purpose Flour
1/2 tsp Baking Powder
1/2 tsp Baking Soda
1 tsp Cajun Seasoning (or seasonings of your choice)
1 Egg, beaten
2 Tbsp Butter, melted
1/2 Cup Buttermilk (or milk, in a pinch)
1 Tbsp Pickled Jalapeno, Diced
1/4 Cup Shredded Cheese (your choice of cheese)
Directions:
Spray a waffle iron with cooking spray and preheat. I used a mini waffle iron in this video. Perfect size to top with an egg, but you can use any size waffle iron that you have handy. If you want a small waffle, just put a small scoop of batter in the middle of the larger waffle iron, for a similar result.
Preheat an oven to 200°F.
Add all of the dry ingredients to a large bowl. Mix well.
Form a well in the center of the bowl, and add the egg, milk, and butter. Stir to combine.
Then fold in the jalapeno and shredded cheese.
Add a small scoop of batter to the waffle iron. Close the lid and let cook until browned, about 2 - 3 minutes.
Remove from the waffle iron and set aside. Repeat this process until the batter is all used up. This should make about 6 small waffles.
As you remove each waffle, place on a pan in the preheated oven. This will keep the waffles warm as you cook, and will also crisp them up a bit. If you want crispier waffles, then toast them.
Serve with the topping of your choice, and enjoy!

Also called gritty waffles, these cornmeal Belgian waffles are a favorite around our house! They've got that sweetness and crunch of cornbread and those beautiful flavour holding craters of a waffle that we all love! I made these cornmeal waffles fairly simple but you could add any herbs and spices to them for some extra flavour! I recommend using either 00 flour or pastry flour for these waffles but all-purpose would work as well (the softer flours just make for a fluffier waffle!) Whether you make them sweet or salty, these cornmeal waffles are the perfect base for your toppings! Enough jibber, jabber...let's get into the kitchen!
Here's what you'll need to make the best vegan cornmeal waffles: (Makes 2 Belgian waffles)
1 cup (128g) 00 flour
1 cup cornmeal
1 cup pea milk (or other plant-based milk)
2 tbsp flax meal
2 tsp baking powder
2 tsp sugar
1/2 tsp sea salt
If you'd like to top your waffles the way that I did, you'll also need:
2 tomatillos
Blueberry chia jam (or other jam of choice)
