Ingredients: 300g Strong Plain Flour 200g Fine Cornmeal A little Salt 7g Fast Action Instant Yeast 390ml Warm Water Coarse Cornmeal to sprinkle
Method: 1) Preheat oven to Gas 8/220’C or 450’F 2) Mix the 300g strong flour, 200g Fine Cornmeal and 1 tsp salt together 3) Add the 7g Fast Action Instant Yeast and stir 4) Pour in the 390ml warm to the touch water 5) Mix well (I like to use my hand mixer with the dough attachment; this takes 5 mins) 6) Cover with oiled clingfilm and leave in a warm place for about an hour, or until doubled in size 7) Sprinkle a little coarse cornmeal into your loaf tin 8) Pop the dough out onto a floured board and knock back 9) Shape to fit your loaf tin, sprinkle a little more coarse cornmeal on top if you wish 10) Cover again and leave to rise again for about ½ hour or until doubled in size 11) Bake for 40– 45 mins (I recommend covering the loaf with loose foil to make sure it does not brown too much) 12) Take out of the loaf tin when cooked ( it should sound solid when tapped on the base)
