How To make Cornbread Stuffed Meatloaf
1 tb Vegetable oil
1 md Onion; finely chopped
2 c Fresh cornbread crumbs
1 c Zucchini; coarsely shredded
2 lb Ground beef
1/2 c Packaged bread crumbs
2 lg Eggs whites
1 ts Salt
1 ts Dried basil
1/4 ts Crushed red pepper
3/4 c Parsley leaves (loosely pack
1/3 c Tomato sauce
In large ckillet, heat oilt; add onion and saute until tender. Remove from heat; stir in cornbread crumbs and zucchini until well combined. Set aside to cool. In large bowl, combine beef, bread crumbs, egg whites, salt, basil and red pepper. Place beef mixture on greased sheet of aluminum foil; pat to 10" square. Heat oven to 350~. Spread 1/2 cup parsely leaves over center third of meat square. Gather and lightly press cornbread mixture into a 10" log. Place over parsely-covered center of meat square. Using foil, bring ends of meat together and seal meat to enclose cornbread mixture. Press loaf firmly and place, seam side down and still on foil, in shallow baking pan. Cover top with foil. Bake 1 hour. Uncover loaf, spread ketchup on top and sides and bake 15 minutes longer. This is also good cold.

Stove Top Stuffing Meatloaf served with an Instant Pot potato and seasoned green beans. This was a very quick and easy recipe; it can be prepared any day of the week.
You will need Stove Top Chicken Stuffing, a pound of 80/20 ground beef, onion mix, eggs, and water. I added margarine, cheese, bacon bits, and sour cream on top of the potato.
For seasoned green beans, I added beef broth, minced onion, and ham. You & your family will enjoy this meal, so try it this week.

3 Garlic cloves- minced
1/2 Cup Milk
2 Eggs
2 Slices of bread
1/2 Tsp Worcestershire Sauce
1 tsp Parsley Flakes
1/2 tsp Black pepper
2 TBSP Season All seasoned salt
1 TBSP Mc Cormick Garlic & Herb salt-free seasoning
1 tsp Red pepper Flakes
2 Tsp Paprika
1/3 Cup Barbecue Sauce (Sweet Baby Rays)
1 Tbsp Ketchup
1/2 tbsp Mustard
1 tsp Brown Sugar

STUFFED MEXICAN CORNBREAD: QUICK WEEKNIGHT DINNER
As always, I over purchased in food preparation for Thanksgiving. With the leftover boxes of Jiffy cornbread mix I decided to make some stuffed mexican cornbread. This uses mostly pantry staples and things you probably already have in your kitchen.
This took longer in the oven this time than it usually does. I'm not sure if it is because I doubled it or if my oven is going out, but this usually only takes about 18-20 minutes, so watch your time. Toss in some extra jalapenos to pretty it up and add a little bite.
Ingredients: (this serves a lot!)
1 medium onion
1 bell pepper chopped
1 lb ground beef or ground pork
4 boxes of Jiffy Cornbread, made per directions
1 pkt taco seasoning mix
1/2 can black beans drained, rinsed
1/2 can corn drained
1 can rotel, undrained (can use diced tomatoes if you dont want spice)
couple cups fresh spinach
2 cups cheese for cornbread, plus a little for sprinkling on top

1/4 cup diced parsley
1 onion grated
2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes (optional)
salt/pepper/garlic/onion powder
Sharp Cheddar Cheese (2-4 oz)
Sauce:
2 tbsps butter
1 cup ketchup
1/3 cup apple cider or white vinegar
1/4 cup molasses
1/4 cup honey
1 tsp liquid smoke
1/2 orange (juiced)
